Easy Breakfast Casserole

We love having breakfast for dinner. This casserole is different than most of the breakfast casseroles I usually make. This casserole has no pre-baked bread in it. The bread comes from a Bisquick mixture that puffs up as it bakes. It was quick and easy to make. We both really enjoyed this. Chicken Legs’ added syrup to his second piece. He said it was great. Feel free to mix up the meats, add veggies or change up the cheeses. This is a really good base recipe to have fun with.

How to Make Pancake Puff Breakfast Casserole

This breakfast casserole is very easy to make. Start with putting some melted butter in the bottom of a 9×13-inch baking dish. Next, whisk together some Bisquick, eggs, and milk. Pour the batter over the butter. Top the batter with chopped ham, cooked sausage, bacon, and cheese. Finally, whisk together more milk and eggs. Pour the egg mixture over the meat and cheese and bake.

I used half a roll of Jimmy Dean breakfast sausage. Feel free to swap the pork sausage for some turkey sausage and turkey bacon. You can also use low-fat cheese.

If you need a gluten-free breakfast casserole, use gluten-free Bisquick.

Ingredients:

  • ½ cup butter melted
  • 2 cups Bisquick mix
  • 2 cups milk
  • 8 eggs
  • 1 cup shredded smoked gouda cheese
  • 2 cup shredded cheddar cheese
  • ½ lb cubed cooked ham
  • ½ lb cooked sausage
  • 6 slices cooked bacon, chopped
  • ¼ tsp dry mustard
  • salt & pepper, to taste

Instructions:

  • Preheat oven to 375ºF. Spray 13×9-inch baking dish with cooking spray.
  • Pour melted butter in dish. Set aside.
  • In medium bowl, whisk together Bisquick, 1 cup of the milk and 2 of the eggs. Pour over butter in baking dish. Spread cheeses, sausage, ham, bacon over mixture.
  • In large bowl, mix the remaining 1 cup milk, remaining 6 eggs, salt, pepper, and dry mustard. Pour over casserole.
  • Bake uncovered 35 to 40 minutes or until golden brown. Let stand 10 minutes before serving.

Notes:

Can use gluten-free Bisquick for a gluten-free casserole.
Can substitute turkey sausage and turkey bacon for pork.
Can use any cheeses you prefer.
I used Jimmy Dean breakfast sausage.

  1. This sounds and looks delicious. What type of sausage do you use? Is it the ground roll, links, or patties? Do you cook the sausage first?

  2. I made this yesterday for company and it was a huge hit. Delicious. Used a combo of Swiss, provolone and cheddar as that was what I had in the house. I made it in advance, cooked halfway and then froze. Thawed it the day before I cooked it and it turned out fine.

  3. I made this last weekend and it was SO good – huge hit with my fiance and his friend.

    My question is, do you think I could make this ahead of time and bake the following day?

    1. I don't know if it would rise up as much if you made it ahead of time. You could bake it and reheat it. If you try making it ahead of time, let me know if it works.

    1. Step 4 says to add garlic salt, pepper and dry mustard however garlic salt is not listed in the ingredients. How much garlic salt should be used?
