Cheddar Bacon Ranch Cheese Ball

Stop what you are doing and make this cheese ball! It is AMAZING! I might have eaten the whole thing by myself. Well, almost by myself. I shared a little with Chicken Legs and he LOVED it too!

This can be made several days in advance and stored in the refrigerator until you are ready to serve it. Don't skip rolling the cheese ball in the chopped pecans. It really adds tons of great flavor to the cheese ball. We ate this with Wheat Thins Veggie Chips. We discovered the chips on a Southwest flight and went straight to the grocery store to stock up on them. If you don't want to use the Wheat Thins Toasted Veggie Chips for some crazy reason, any cracker will work fine.

Buffalo Chicken Noodle Casserole

This is another version of our new favorite Chicken Noodle Casserole. We've made Cracked Out Chicken Noodle Casserole and French Onion Noodle Casserole. This Buffalo Chicken Noodle Casserole is just as delicious as the others! We couldn't stop eating it!! This would be a great dish to serve at a football party. All the flavor of buffalo wings, but Much easier than eat!

This dish does have a hint of heat from the buffalo sauce. I used 2/3 of a cup in this dish and didn't think it was spicy. I just thought it tasted like buffalo wings. If you are concerned about the heat, please reduce it to your liking.

Pumpkin Spice Oreo Delight

Pumpkin Spice is everywhere this time of year. I mean everywhere! I broke down and bought a package of the new Oreo Pumpkin Spice cookies. I was prepared to hate them, but they were actually pretty good! I bought two packs, so I started thinking of ways to use them in a recipe.

I decided try my hand at an Oreo Delight recipe. I went all out pumpkin spice and used pumpkin spice pudding in this recipe too. *I found the pudding at Walmart.*

It was super easy to make and it tasted really good! I let this sit in the refrigerator overnight before we sampled it. If you want a quick, no-bake dessert with no pumpkin, just pumpkin spice - this is for you!

One Pot Chili Mac {No Boil}

One Pot Chili Mac {No Boil} - chili and pasta simmered in the same pot! No need to precook the pasta! Great quick and easy weeknight meal!

One pot, no-boil dishes are my favorite! I love how easily they come together and how easy they are to clean up! This One Pot Chili Mac is no exception. I browned the meat and then threw everything else in the pot. I let it simmer for about 15 minutes and dinner was ready. 

I served this with some Texas Toast Cornbread, because chili needs cornbread. Feel free to top this Chili Mac with your favorite chili toppings - sour cream, cheese, jalapeƱos, and Fritos. This was SO good. I ate WAY too much of it! It was even good reheated for lunch. This would be a great dish to serve while having friends over to watch football!

South Carolina Bird Dogs {Football Friday}

South Carolina Bird Dogs  - chicken fingers, bacon, cheese and honey mustard - perfect tailgating food! Easy to assemble in the parking lot! We also love to eat these for a quick lunch or dinner.

I saw this recipe online and was instantly intrigued. I had never heard of a food called "bird dog". After some research, I found out they are a "thing" in South Carolina. Nick Henry's and J C's Sandwich Shoppe are apparently famous for them. SO, what is a bird dog you ask? Chicken fingers, bacon, cheese and honey mustard in a bun - or perfection in my book.

This is a fantastic tailgating recipe. Simply buy some chicken fingers on the way to the tailgate and assemble them in the parking lot. The only special equipment you need is a kitchen blow torch. You can use the blow torch to melt the cheese and heat up the chicken and bun. These are my new favorite way to eat chicken fingers!

One note - I used Martin's Potato Rolls for this recipe. I adore Martin's Potato Rolls. They are the best! If you can find them, I highly suggest using them.

Mummy Pizza

Need a quick snack before or after trick-or-treating next week? Try these cute Mummy Pizzas. They only take a few minutes to whip up and they are SO much fun to eat.

I used frozen bread rolls (Rhodes). I like to use frozen bread dough for a couple of reasons. First, I just like the way it tastes. Second, I can make as many or a few as I want/need.

Want to know my secret for making these Mummy Pizzas in minutes? Pop the frozen rolls in the microwave for 40-45 seconds. Don't do it any longer or the dough will start to cook. Once the dough is thawed and you are ready to decorate the pizzas. If you want to make these ahead of time, thaw and bake the dough for 8 minutes. Pop the partial baked dough in the fridge and assemble when you are ready to eat.

Homemade Powdered Sugar - 2 Ingredients

The other day I was making cupcakes for a friend's birthday. I started to make the buttercream and realized that I didn't have enough powdered sugar. I had already sent Chicken Legs to the store to get some cake mix, so I didn't want to hear him complain about going back so soon. I decided to whip up my own powdered sugar. I pulled out my Blendtec blender, and, in about 15 seconds, I had powdered sugar! 

You only need two ingredients to make homemade powdered sugar - sugar and cornstarch. It helps to have a powerful blender, but any blender or food processor should work. One tip - make sure you wait a minute or two before opening the top on the blender. There is a lot of powdered sugar dust inside the blender. You don't want that all over your kitchen - trust me! :)

Corn and Chicken White Chili

Corn and Chicken White Chili Recipe - made in the slow cooker - dried northern beans, chicken, green chiles, corn, chicken broth, half-and-half, cumin - slow cooks all day. Serve with some crusty bread or cornbread for an easy weeknight meal!

Before I went on my world travels with Amanda, I made tons of food for Chicken Legs to eat while I was gone. We grilled insane amounts of chicken, and I made a few soups as well. This was one of those soups. It was so delicious and super easy to make. 

I used dried beans and soaked them overnight. The next morning, I just dumped everything in the slow cooker and let it cook all day. Easy peasy! The chili tasted great. We topped with with some extra cheese, because you can never have enough cheese! After we were done, I poured the chili in individual containers and froze it for later. Chicken Legs said this was just as good reheated. I will definitely be making another batch of this Corn and Chicken White Chili to have in the freezer for a quick meal this Fall/Winer!
