Amelia Island, FL {Sweet & Spicy Pecans}

We spent the first part of the week in paradise. 
We spent 3 nights in Amelia Island, FL. We went to the spa, played golf, walked on the beach and just relaxed. It was so nice! 

The beach at Amelia Island is unlike any other beach I've been to.
It has the most amazing shells! 
This year there were tons of starfish and horseshoe crabs on the beach too.

Sweet & Spicy Pecans
I took these Sweet and Spicy Pecans for us to snack on in the car. 
They were so good and super simple to make.
The recipe is at the bottom of this post.

My favorite thing to do in Amelia Island is to walk on the beach and see all the shells.
This was the first time I saw starfish on the beach. There were TONS.

The hotel lobby had a HUGE gingerbread ship.
It said it was the World's Largest Pirate Gingerbread Ship!
It has over 600 gingerbread pieces.

Sweet & Spicy Pecans
I took these Sweet and Spicy Pecans for us to snack on in the car.
They were great! The pecans are soaked a simple sugar and then tossed in a combination of sugar, chili powder and red pepper. The result is a super delicious snack! I am making a batch for Christmas snacking and for New Years. These would be great for watching all the upcoming College Football Championship playoff games.


Sweet and Spicy Pecans
2 cups
(Printable Recipe)
  • 2 cups pecan halves
  • 2 cups water
  • 3/4 cup sugar, divided
  • 2 Tbsp chili powder 
  • 1/4 tsp ground red pepper

Preheat oven to 350 degrees.

In a medium saucepan, combine water and 1/2 cup sugar. Heat over medium-high heat until sugar is dissolved. Remove from heat. Add pecans. Let soak for 15 minutes.

Drain pecans and place in large bowl. Add remaining 1/4 cup sugar, chili powder and ground red pepper. Toss to coat.

Place coated pecans on a large baking sheet. Bake for 10 minutes, stirring midway through baking time. Remove from oven and cool.

    1. Most of the reindeer bowls are MudPie brand. You can get the online at Nordstrom and mud-pie.com

    1. we've only stayed at the Ritz Carlton at Amelia Island - it is wonderful. There is also the Omni Amelia Island Plantation. It looks nice.
