Ham and Cheese Pastry Puffs {Football Friday}

Ham and Cheese Pastry Puffs

Are you ready for football??? I am SOOOO ready! I can't wait to see all our football friends. These Ham and Cheese Pastry Puffs are perfect for tailgating. They are bite-sized and travel well. These pastry puffs are good warm or at room temperature.

These are easy to make. Cut the puff pastry into squares, top with dijon mustard, ham, cheese, spices and fold up. Easy peasy! I made an animated picture so you can get an idea of how to assemble these.

We ate these for lunch the other day and they were AMAZING! The flavors are great. The spice blend that is sprinkled on top of the pastries really puts this dish over the top. I used a combination of swiss and white cheddar cheese. If you don't like either or both of those cheeses, use your favorite cheese. No matter the cheese, these are a sure crowd pleaser!

Cool Ranch Chicken Tenders

Cool Ranch Chicken Tenders

I get a lot of questions about what type/brand of chicken I buy. My favorite brand is Tyson ® Fresh Chicken. I love it because it is all natural* without added hormones or steroids**. It is delivered within days of leaving the farm, so I know it is fresh. It's the next best thing to being on the farm! Which is good, because I'm not a farm kind of girl.

Tyson Fresh Chicken has a great site for easy meal planning - PickTysonFresh.com. The site has convenient recipe ideas that save time and effort. My kind of recipes! I am always striving to make quick and easy meals. I don't want to spend all night in the kitchen. I want to have plenty of time to spend with Chicken Legs and the cats.

Put these chicken tenders on your menu ASAP! They are crazy good. We both took one bite and said "YUM!" The chicken is coated in a mixture of taco and ranch seasoning. It is so good. They tasted similar to Cool Ranch Doritos, but healthier. These chicken tenders are on the table in under 30 minutes. I had the chicken coated in the time the oven preheated and popped them in the oven for about 15 minutes. These were so good that I wished I had doubled the recipe so I had leftovers for lunch. I am already planning on making these again very soon!

{Freezer Meal} Asian Pork Tenderloin

{Freezer Meal} Asian Pork Tenderloin

For our last freezer meal I have an Asian Pork Tenderloin. This was really good. Super tender and it had tons of flavor. I am not a huge fan of Asian food, but I really enjoyed this pork tenderloin. We served this with some cheesy rice and peas. We ate the leftovers on slider buns and they were delicious!

I hope you enjoyed this series of freezer meals. I had fun testing out all the recipes and loved how convenient they were! I will be sharing a recap and shopping list tomorrow in case you want to make all of the freezer meals at one time.

{Freezer Meal} Meatball Subs

{Freezer Meal} Meatball Subs

We are on the homestretch of our freezer meal series. Only two recipes left! Today's recipe was one of my favorite in the series. These meatball subs were crazy easy and tasted great. Frozen meatballs come in a lot of different sizes. I used 1-ounce meatballs. I thought they were just the right size for these subs. I made the garlic bread right before we ate dinner. I made my own, but you could use a loaf of frozen garlic bread if you don't want to take the time to whip up your own. Serve this with a side salad for an easy meal!
