If you love almond flavors, then you are going to absolutely love these Triple Almond Cookies! They are packed full of tons of almond flavor. Almond extract, chopped almonds, and almond toffee bits. The house smelled amazing while the cookies were baking. We couldn’t wait to give them a try. We both had a really hard time controlling ourselves around these cookies. They are dangerously delicious! 

How to Make Almond Cookies

These cookies are easy to make with only a few simple ingredients. In a small bowl, whisk together all-purpose flour, baking soda, salt, and cream of tartar. Set aside. In the bowl of an electric stand mixer fitted with the paddle attachment, beat together unsalted butter, powdered sugar, and granulated sugar until light and fluffy. Add vegetable oil, eggs, and almond extract. Add dry ingredients to the butter mixture, mixing well. Stir in almonds and toffee bits.

Using a medium cookie scoop, scoop cookie dough and roll dough in granulated sugar. Place on a parchment paper lined cookie sheet. Flatten cookies in a criss-cross pattern with a fork dipped in granulated sugar. Bake cookies in a preheated oven until the edges are golden brown. Cool cookies on a wire rack.

Ingredients:

  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 1 cup sifted powdered sugar
  • 1 cup vegetable/canola oil
  • 2 large eggs
  • 1 tsp almond extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cream of tartar
  • 2 cups sliced almonds
  • 1 (6-oz) package almond toffee bits
  • additional sugar for rolling cookies

Instructions:

  • Preheat oven to 350ºF.
  • Beat butter at medium speed of an electric mixer until creamy. Gradually add sugar and powdered sugar, mixing well Add oil, eggs, and almond extract, and mix well.
  • Combine flour, baking soda, salt, and cream of tartar. Add to butter mixture, mixing well. Stir in almonds and toffee bits.
  • Scoop cookies with a medium cookie scoop (2 Tbsp). Roll dough in granulated sugar and place on a parchment-lined baking pan. Flatten cookies in a criss-cross pattern with a fork dipped in granulated sugar.
  • Bake for 10-12 minutes. Cool slightly on the pan and remove to wire rack to cool completely.

  1. I am not sure what almond toffee bits are or where to find them. Is there a certain brand I should look for? I can only find toffee bits, like Heath. Is that the right thing to use?
