I whisked up the ingredients and let it hang out in the fridge all day. We grilled the pork for dinner and absolutely loved it! We served with with our Homemade Chicken Rice-A-Roni and some lima beans. My Mom was right, it was great!
Cajun Dijon Grilled Pork Tenderloin
adapted from Southern Living Homestyle Cooking
serves 4 to 6
- 1 cup Dijon mustard
- 1 orange, juiced (1/3 to 1/2 cup juice)
- 3 Tbsp Creole/Cajun seasoning
- 1 1/2 lb pork tenderloin
Whisk together dijon mustard, orange juice and creole seasoning.
Place pork in a ziplock bag and pour mustard mixture over pork. Seal bag and refrigerate at least 30 minutes.
Remove pork from marinade and grill for 10-12 minutes per side, until temperature is 155 degrees. Let stand 5 minutes before slicing.
