I got this recipe several years ago when my Mom and I attended a cooking class at The Ritz Carlton in Amelia Island. We spent two days cooking and eating with the chefs at the restaurant in the hotel. We had such a great time and got tons of great recipes!

This Potato Salad is THE BEST! It isn’t full of mayonnaise, so you can really taste all the flavors in the potato salad. I hate potato salads that are a little bit of potatoes and a lot a bit of mayonnaise. This potato salad is light on the mayonnaise and full on the fresh herbs and vegetables. One surprise flavor you will taste is lemon. The dressing has some lemon juice and zest in it. It really makes the potato salad. This is our “go-to” potato salad recipe. It is simple and tastes great. Everyone always asks for the recipe!

  1. Not a big fan of tarragon but the recipe exactly as written is by far the best potato salad I have ever had!

  2. We'll have to try this but I must admit to mustard being a requirement for good potato salad for me – maybe the lemon juice will satisfy that. Your shot of it makes me want to dive into the screen.
