Easy Taco Chicken Soup Recipe

This Chicken Taco Soup can be made two different ways; on the stovetop with some rotisserie chicken or in the slow cooker with some boneless chicken breasts. I’ve made it both ways. Either way, it is super delicious and packed FULL of flavor! This soup also freezes well. I portion out the leftovers and put it in the freezer for a quick meal later.

How to Make Taco Soup Two Different Ways

This soup is super easy to make on the stovetop and in the crockpot. Add chicken, chicken broth, taco seasoning, ranch seasoning, black beans, pinto beans, and corn to a Dutch Oven or slow cooker. On the stovetop, bring the soup to a boil and simmer until warm. In the slow cooker, cook until the chicken is cooked. Shred the chicken with two forks and serve.

  • I used chicken breasts in the slow cooker version. Feel free to use your favorite cut of chicken – breasts, tenders, or thighs.
  • Is the soup spicy? We did not think the soup was spicy. Use a can of MILD Rotel for a less spicy dish.

  • I used pinto beans and black beans. You can use any beans that you prefer.
  • Can Chicken Taco Soup be frozen? Yes! You can freeze leftovers for a quick meal later. Cool the soup and place in plastic containers or freezer bags. To reheat, thaw and reheat on the stovetop or in the microwave.
  • To make a freezer meal out of this recipe, place all the ingredients in a gallon freezer bag. When ready to make the soup, place the contents of the bag in the slow cooker and cook all day on LOW. There is no need to thaw the bag before adding it to the crockpot.
  • Is taco soup gluten-free? Yes! Make sure to use a gluten-free taco seasoning (or homemade) for a gluten-free dish.

What to Serve with Taco Soup

We served this soup with some cornbread for a super quick meal. I thew the cornbread in the oven when I made the stovetop version of the soup. Everything was ready in under 30 minutes! I love quick and easy meals like this. We like to top our soup with sour cream, Fritos, cheese, and some cilantro. This is also great with some avocado on top. YUM!

Slow Cooker

  • Place uncooked boneless chicken breasts in slow cooker. Top with beans, tomatoes, corn, Ranch mix, taco seasoning and chicken broth. Cook on low for 8-9 hours. Serve with Fritos, cheese and a dollop of sour cream.

Stove Top

  • In a Dutch Oven, combine cooked chicken beans, tomatoes, corn, Ranch mix, taco seasoning and chicken broth. Bring to a boil. Reduce heat and simmer for 20 to 30 minutes. Serve with Fritos, cheese and a dollop of sour cream.

  3. This soup is AMAZINGLY delicious! I made it in the slow cooker and it was oh so easy. Just dump it all in and go! It only took 6 ½ hours on low in my slow cooker, but slow cookers are not all created equal and mine runs a bit hot. I made it to have for lunch throughout the week. I just stored it in individual sized containers in the fridge for easy grabbing and microwaving to warm up. It’s full of delicious flavor and very satisfying for lunch or dinner!

  4. I have fixed this twice this week. It is Sooooo good, easy to make and is better the next day. We had company the first time I fixed it and it was gone! Fixed it again and will freeze leftovers. We cut corn tortillas into strips and fried them in about an inch of oil. Grated cheese and sour cream. YUM!!

  5. I made this last night. 1 because it was simple. 2 because my husband was away, and I thought I could get away with a"light soup" for dinner. 3 my kids love tacos. OMG this soup was so good! What a great meal! Light? NO way! Hearty, flavourful, fantastic! Kids loved it and didn't even pick out little bits of anything which is just the way they roll. I served it with sour cream, shredded cheese and Fritos on top as you suggested, which definitely make it. Love love love it!
