I adapted this recipe from one of our old favorites – Sour Cream Noodle Bake. The original recipe uses noodles. I’ve been on a rice casserole kick lately, so I decided to swap out the noodles for rice. The result was a fantastic quick weeknight meal!

This Sour Cream Beef and Rice Casserole has quickly become one of our favorites. I love all the flavors in this dish! I also love how easy it is to make!

How to Make Sour Cream Beef & Rice Casserole

Start with cooking some instant rice. While the rice is cooking, brown some ground beef. Add pepper, garlic salt, tomato sauce, and Worcestershire. Stir and simmer for 5 minutes. Mix together the cooked rice, cottage cheese, and sour cream. Spread in the bottom of a baking dish. Top with the meat sauce and cheese. Pop it in the oven and bake.

  • You can use 3 cups of any type of cooked rice you prefer.
  • Can substitute ground turkey for the ground beef.
  • I don’t like cottage cheese. What can I substitute? I urge you to try this with cottage cheese. I don’t eat cottage cheese, but I love it in casseroles. If you won’t try it, ricotta cheese is a common substitute for cottage cheese.
  • What can I substitute for sour cream? You can substitute plain Greek yogurt for the sour cream.

Ingredients:

Instructions:

  • Preheat oven to 350ºF.
  • Bring water to a boil in a medium saucepan. Stir in instant white rice, cover and remove from heat. Let sit for 5 minutes, or until all water is absorbed.
  • Brown meat; drain off fat and return to skillet. Add pepper, garlic salt, tomato sauce, and Worcestershire. Stir and simmer for 5 minutes.
  • Mix together cottage cheese, sour cream, and rice.
  • Lightly spray a 9×9 casserole dish with cooking spray. Spread rice mixture in the bottom of the pan. Top with meat sauce. Sprinkle cheese on top of casserole and bake for 20-25 minutes.

  1. This was very enjoyable, and I had all the ingredients on hand. I doubled the recipe as we are big eaters in my household. The one thing that always makes me smile is that you can always tell when it is an American recipe. You put cheese on literally everything. I don’t use cheese due to the amount of fat and calories it adds to dishes but cheese is always in any savory recipe.

  2. This is actually really good! I stumbled across it when I was looking for a new ground beef/rice casserole recipe. I didn't have cottage cheese so put about 3 T of cream cheese in. I also wanted more veggies, so I added a half onion (sautéed) and some corn. The creamy rice base is really nice.
