This recipe is from Plain Chicken reader, Kerri. Kerri and her son, Owen, are big Plain Chicken fans. Owen is always in the kitchen. He makes a lot of Plain Chicken recipes and Kerri tweets pictures for me. I love to see what he is cooking! About a month ago Kerri sent me this recipe for her potato soup. It was different from my usual recipe, so I jumped at the chance to give it a try. It was SO easy and smelled amazing while it cooked in the slow cooker. Chicken Legs and I couldn’t wait to eat it!

If you don't like cream cheese can you substitute heavy whipping cream???
I don't know how that change will turn out. I've only made it as written.
Could you give me a hint as to the size fo the slow cooker? I have a 3 quart and a 6 quart and can't really tell which size would be best.
I used a 6-quart slow cooker
Yum! We've got a ham bone in the freezer just waiting for this recipe! Thank you!
I made this tonight after having bookmarked it a while ago. It turned out great! I finished mine off with some shredded cheddar cheese.
I did NOT thaw the hashbrowns. Since "softened" cream cheese was specified, I figured the author would have specified if I needed to thaw them. It still came out fine!
OH. MY GOOODNESS! We are FAMOUS!! Owen and I just squealed. We might have also jumped up and down a little bit. Love it. Glad you enjoyed. For those wondering, I just buy a packaged of cubed ham if I don't have any left from a previous meal. I am no chef, so we would starve without Steph and Plain Chicken. Making your recipes has been a great way for us to be together in the kitchen (and secretly begin to teach him some skills for when he moves out someday!). Happy New Year. Can't wait to see what we make in 2016. 🙂
What brand of ham do you use? I can't seem to find one that I'm crazy about.
I try and use Honey Baked Ham – it is my favorite. If I don't have that on hand, I use Smithfield.
You've got to try it with dill! I have a potato soup recipe like that and it's delicious!
This does sound good, and I love how simple it is to put together. How fun that you shared a reader recipe – love that!
