Black eyed peas are an absolute must for New Year’s in The South. You must eat black-eyed peas for good luck and prosperity in the new year. I have several recipes for black-eyed peas, but I am always open to trying a new one. I ran across this recipe in one of my cookbooks and decided to give it a try. I’m so glad I did. It is great! Black-eyed peas, chicken broth, tomatoes, jalapeños, red pepper, pepperoni, and rice. It is a meal in itself! Just add some greens (for wealth in the new year) and cornbread to complete the New Year’s Day spread!
How to Cook Dried Black Eyed peas in the Crock Pot
These beans are effortless to make in the slow cooker. Place dried black eyed peas in the slow cooker. Cover with water 2 inches above peas; let stand 8 hours or overnight. Drain and place the soaked peas back into the slow cooker. Add chopped green onions, red bell pepper, jalapeno pepper, chopped pepperoni, chicken bouillon, salt, garlic, ground cayenne pepper, and stewed tomatoes to the slow cooker and stir to blend. Pour chicken broth into the slow cooker. Cover and cook on LOW heat for 8 hours, until the peas are tender. Stir in instant white rice and for an additional 30 minutes.
- Can substitute turkey pepperoni, chopped bacon slices, or ham for the pepperoni.
- I use instant white rice. You can substitute instant brown rice. Brown rice takes longer to cook, so make sure to check the rice for doneness before serving.
- For a less spicy dish, make sure to remove the seeds and membranes from the jalapeno chile.
- Use a can of MILD Rotel diced tomatoes and green chiles for a milder dish.
- Can I cook the peas on HIGH in the crockpot? Yes! You can cook the peas for 4 hours on HIGH.
- Are Spicy Black Eyed Peas gluten-free? Make sure to use a gluten-free pepperoni for a gluten-free dish.
What to Serve with Spicy Mexican Black Eyed Peas
We like to serve the peas in a bowl and garnish them with some tabasco, fresh parsley, or cilantro. Serve this with our Sweet & Buttery Cornbread slathered in honey butter and you are set. You can serve this recipe as a main dish or side dish. These peas go great with ham, turkey, pork chops, and more.

Slow Cooker Spicy Black Eyed Peas
Equipment:
Ingredients:
- 1 (16-oz) package dried black-eyed peas
- 4 green onions, chopped
- 1 red bell pepper, chopped
- 1 jalapeño pepper, diced
- 1 (3-oz) package pepperoni slices, chopped
- 2 cups chicken broth
- 1 chicken bouillon cube
- ¼ tsp salt
- ¼ tsp ground red pepper
- ¼ tsp garlic powder
- 1 (14.5-oz) can Mexican stewed tomatoes
- ¾ cup instant white rice, uncooked
Instructions:
- Place dried black eyed peas in slow cooker. Cover with water 2 inches above peas; let stand 8 hours or overnight. Drain.
- Combine soaked black eyed peas, green onions, red bell pepper, jalapeño pepper, pepperoni, chicken broth, chicken bouillon, salt, ground red pepper, garlic, and stewed tomatoes in slow cooker. Cover and cook at LOW 8 hours.

Very Good Recipe, ,only thing I would do differently is rinse out the stewed tomato can with water and add to the recipe for a little more liquid, mine came out a tad dry so with addition of liquid you have a Great Recipe,,My Wife is a black eye pea eater and really enjoyed this recipe,,thxs for sharing..Blessings..
