Easy White Chocolate Candy Cane Chex Mix

I should rename this White Chocolate Candy Cane Chex Mix to “Christmas Crack”. It is SO addictive! I could not walk past it without having a bite. Thankfully, I had some great friends that agreed to take most of this mix off my hands.

How to Make Peppermint Chex Mix

This recipe only has 3 simple ingredients and takes about a minute to make. Place some Chex cereal in a large bowl. Melt a package of almond bark, stir in peppermint oil, and pour over the cereal. Toss to coat the cereal. Add crushed candy canes and toss again. Spread out on wax or parchment paper to cool and set up. Break into pieces and enjoy.

  • This recipe uses peppermint oil and NOT peppermint extract. Adding liquids to almond bark will cause the candy coating to seize up. Using peppermint oil won’t change the consistency of the candy coating and adds a lot of peppermint flavor.   • The coated cereal will keep for at least a week in an air-tight container.
  • You can use flavor Chex cereal that you prefer.
  • I use a food processor and basically make candy cane dust with small pieces.
  • If you don’t want to use almond bark, you can substitute an equivalent amount of white chocolate. You will want to add a tablespoon or two of shortening to the white chocolate chips to easier to melt and gives it a smoother, creamier texture.

Ingredients:

  • 1 (12.8-oz) box Rice Chex Cereal
  • 1 (24-oz) package white almond bark candy coating
  • 1 (6-oz) box peppermint candy canes, crushed
  • 1/4 tsp peppermint oil, optional

Instructions:

  • Place cereal in a very large bowl – the biggest one you have.
  • Melt candy coating according to instructions on the package. Add the peppermint oil to the candy coating (if using) and pour over cereal. Stir until all the cereal is coated.
  • Pour crushed candy canes on top of the cereal and toss to coat.
  • Pour cereal on wax or parchment paper and allow to harden. Once the cereal has hardened, break into pieces and enjoy!

      1. You said can last up to week in air tight container. Is it possible to keep longer? Want to mail and that would be longer time.

        1. It probably will keep longer. Just make sure to keep it in an airtight container so it doesn’t get stale.

  2. the food processor pulverizes the candy canes nicely, but i prefer to double bag them and whack them with a meat mallet. It works and makes me feel better.
