Pizza Sloppy Joes

Pizza Sloppy Joes Recipe - hamburger or sausage, pepperoni, mushrooms, pizza sauce - top with mozzarella cheese. Our new favorite way to eat sloppy joes! Ready to eat in about 15 minutes!

Chicken Legs is a big fan of Sloppy Joes. He absolutely loves them. I don't make them often enough for him since I'm not a huge fan. Well, I am a huge fan of these Pizza Sloppy Joes! They were SO good. Hamburger or Sausage, pepperoni and mushrooms simmered in pizza sauce. You could even add onions, peppers and olives to the meat mixture. We used slider buns and topped them with some mozzarella cheese. I was happy because they tasted like pizza and Chicken Legs was excited to have one of his favorite meals!

Chicken Taco Soup {Two Ways}

Chicken Taco Soup Recipe - Chicken, beans, corn, tomatoes, Ranch mix and taco seasoning. Can be made two different ways. On the stovetop with some rotisserie chicken or in the slow cooker with some boneless chicken breasts. Either way, it is super delicious and packed FULL of flavor! Serve with some cornbread for a delicious meal!

This Chicken Taco Soup can be made two different ways; on the stovetop with some rotisserie chicken or in the slow cooker with some boneless chicken breasts. I've made it both ways. Either way, it is super delicious and packed FULL of flavor! This soup also freezes well. I portion out the leftovers and put it in the freezer for a quick meal later.

We served this Chicken Taco Soup with some cornbread for a super quick meal. I just used a package of Martha White Buttermilk Cornbread & Muffin Mix. I thew it in the oven when I made the stovetop version of the soup. Everything was ready in under 30 minutes!

InSinkErator Garbage Disposal {Giveaway}

InSinkErator Evolution Excel Garbage Disposal - my MUST HAVE kitchen tool. I did all the research so you don't have to! I can't live without this in my kitchen!

I don't know about you, but I cannot live without my garbage disposal. It is one of the most important kitchen gadgets in my house. Seriously! We use it multiple times a day. That is why when my garbage disposal died a few months ago, I totally freaked out! I simply can not function in the kitchen without my garbage disposal. 

The garbage disposal that died was the original disposal that the builder installed. It was never the best quality. It wasn't powerful enough for our kitchen. I did some research and decided to upgrade to an InSinkErator Garbage Disposal

Through my research on the internet, I learned a lot about garbage disposals. A lot!

For starters, there are no blades in a food-based disposer.
Contrary to popular belief, it does not act like a blender. 
Who knew?

This is how it works: 

  • Once food waste enters a disposer, it falls onto a rotating shredder plate – and this actually does most of the work.
  • The plate spins and knocks the food around, breaking into little pieces.
  • The centrifugal force of that spinning plate then throws the food waste against the walls of the disposer chamber, which look a lot like a cheese grater.  
  • The food continues to be grated down through this motion
InSinkErator Evolution Excel Garbage Disposal - my MUST HAVE kitchen tool. I did all the research so you don't have to! I can't live without this in my kitchen!
I spent a lot of time looking over all the different models InSinkErator offered. InSinkErator has two lines of garbage disposals. The Badger and The Evolution Series. Both are great and get the job done. The main difference is the capacity and the sound level. We had to go with either the Badger 5XP or an Evolution Series because we wanted at least a 3/4 HP motor. 

I wanted something with a lot of power, that would be quiet and was affordable. We aren't on a septic tank, but there is an option for an InSinkErator garbage disposal for those of you that are on a septic tank. 

I eventually picked out the InSinkErator Evolution Excel. It was less than $400. I chose the Evolution Excel because I cook so much and use my garbage disposal multiple times a day. I wanted the biggest motor available. I also considered the InSinkErator Evolution Compact, but decided it was worth the little extra money for the extra power. The Evolution Excel is able to grind everything from artichokes to rib bones. It grinds bones - bones, y'all! Crazy!! You can throw vegetable peels down there too. It is also super quiet! You can have a conversation in the kitchen while the InSinkErator Evolution Excel is running! At our house everyone gathers in the kitchen. I love that I can quickly clean up and not disrupt the party.

The InSinkErator Evolution Excel is super easy to install. They have great video instructions that walk you through each step on the InSinkErator website. If Chicken Legs were even the slightest bit handy he could have installed it for us. Unfortunately, there isn't a handy bone in that man's body. SO,  Chicken Legs called a plumber and it only took the plumber a few minutes to remove the old garbage disposal and install my awesome new InSinkErator Evolution Excel. I was back in business in no time!!

I know it sounds weird, but I love the new garbage disposal! It is SO much better than the one the builder installed. I love that it will grind up everything. It makes cooking and clean up so much easier. We just throw everything in the disposal and grind it up.  Easy Peasy!

Hissy Fit Dip {Football Friday}

Hissy Fit Dip Recipe - sausage, sour cream, Velveeta, muenster, onion and garlic powder, Worcestershire sauce and parsley - SO good. You will definitely throw a hissy fit if you miss out on this dip! Crazy good! Can mix together and refrigerate a day before baking. Serve with chips and veggies! It is always gone in a flash!

You will most definitely throw a Hissy Fit if you miss out on this dip. It is SOOOO good! How could it not be when it has sausage and Velveeta in it? YUM! I could make a meal out of this dip. I actually might have eaten this for lunch the day I tested it out. No shame! It is that good!

I used Velveeta shreds in this recipe. I found them at Walmart in the refrigerated cheese section. It is shredded Velveeta cheese. It is great for dip recipes like this. If you can't find the Velveeta shreds, just make sure to chop up your Velveeta really good. You don't want big clumps of Velveeta in the dip.

This dip can be mixed-up ahead of time and refrigerated overnight before baking. I don't think it would freeze well because it is sour cream based. Serve this with tortilla chips, Fritos and/or veggies.

Taco Breakfast Casserole

Taco Breakfast Casserole Recipe - Taco meat, eggs, milk, cheese, bread and rotel tomatoes - assemble and refrigerate 8 hours to overnight. SO easy and SOOOO delicious! Perfect for breakfast, lunch or dinner. Would be great for an early morning tailgate!

We love to have breakfast for dinner. We aren't big breakfast eaters; we usually have a protein shake or smoothie. I only make breakfast when we have overnight guests or a long weekend. This Taco Breakfast Casserole is SO good. Taco meat, eggs, milk, cheese, bread and rotel tomatoes. All of our favorite things!

The casserole has to sit for at least 8 hours. I like to make it the night before and just let it hang out in the fridge until dinner. This is was SO delicious. I ate way too much of this! I loved how easy it was to make and that I could assemble it early. I used lean ground beef, but ground turkey would also be great in this Taco Breakfast Casserole. Either way, this is perfect for breakfast, lunch or dinner. This would also be great for an early morning tailgate too! (I'm always thinking of tailgating!)

Sriracha Ranch Chicken

Sriracha Ranch Chicken Recipe - only 3 ingredients, including the chicken! Not super spicy even though there is a good amount of Sriracha - can increase or decrease depending on your personal preference. Great tasting chicken recipe!

This recipe only has 3 ingredients, including the chicken. I love simple recipes like this! Despite only have 2 ingredients in the marinade, it packs a ton of great flavor! I was worried that this might be super because of the Sriracha, but it wasn't. We actually thought it could of had more Sriracha. The great thing about this recipe, is that the Sriracha can be adjusted up or down depending on your preference. We made 4 chicken breasts so we could have leftovers. The leftovers are great on top of a salad, in a quesadilla or on top of a flatbread (our favorite way to use up leftover chicken).

Bacon Wrapped Asparagus

Bacon Wrapped Asparagus Recipe - fresh asparagus wrapped in bacon, topped with a sweet and savory sauce and baked. SO good! Can wrap asparagus in bacon ahead of time and refrigerate. Great for dinner parties and a quick weeknight side dish!!

Everything tastes better wrapped in bacon. Am I right?!?! This Bacon Wrapped Asparagus is SO good! It is seriously delicious. I could make a meal out of this stuff. We both couldn't get enough of it. I mean, asparagus and bacon baked in a sweet and savory sauce. How could it not be good?

The asparagus can be wrapped in bacon ahead of time and refrigerated overnight. I wouldn't pour the sauce over it since the sauce has butter and it might harden in the fridge. The sauce only takes a couple of minutes to make; less time than it takes to preheat the oven.  This Bacon Wrapped Asparagus is a great for a dinner party, cookout or even easy enough for a weeknight. Give it a try; you won't regret it!
