This Quick Enchilada Rice has quickly become a favorite at our house. We’ve been making it to go with tacos, fajitas and burrito bowls. This rice only has 2 ingredients and takes 5 minutes to make. How awesome is that?!?! Not only is this Quick Enchilada Rice super easy to make, it tastes great too! I think it tastes just as good as the Mexican restaurant. Give it a try on your next taco night!!

Yield: 4 cups

Quick Enchilada Rice

prep time: cook time: 10 MINStotal time: 10 mins

ingredients:

  • 2 cups instant white rice
  • 1 cup water
  • 1 cup enchilada sauce

instructions:

  1. Combine water and enchilada sauce in medium sauce pan. Bring to a boil. Add rice, cover and remove from heat. Let sit, covered, for 5 minutes or until liquid is absorbed.

  1. Sounds yummy! I don't have instant rice but I do have white rice that would cook up like 1c rice & 2c water…would I still add the 1c enchilada sauce or more/less?? I can never figure out instant–>non-instant proportions in recipes!!

  2. Made this tonight to go with some chicken and cheese enchiladas. It was sooo easy (tired teacher appreciates that) and both my kids loved it! That's saying something because I have two very picky eaters because one child has Autism and the other refuses to eat pork and beef just because she doesn't like it…so anything that everyone eats is a winner in my book!
