I started thinking if the regular cornbread was good, it would be AMAZING “cracked out” with cheddar, bacon and Ranch added. Well, I was right. This was sooooo good! I could have made a meal out of it!
This “Cracked Out” Sour Cream Cornbread goes great with soup, chili, beef stew, baked chicken or any grilled meat. Really, it is good with anything! We make this all the time. Give it a try at your next meal!! I promise it will be a hit!

Cracked Out Sour Cream Cornbread
Ingredients:
- 1 cup self rising corn meal
- 1 cup sour cream
- 1 cup creamed corn
- 1¼ cup shredded cheddar cheese
- ⅓ cup cooked chopped bacon
- 1 Tbsp ranch dressing mix
- 2 large eggs
- ½ cup vegetable/canola oil
Instructions:
- Preheat oven to 450°F. Lightly spray an 8×8-inch pan with cooking spray.
- Mix together all ingredients. Pour into prepared pan.
- Bake for 30 to 35 minutes, until golden brown.
Can I substitute 2 boxes of jiffy corn muffin mix for the cornmeal?
Made this tonight with a slow cooker full of pinto beans. Wonderful flavor! We loved it. I didn’t have shredded cheddar so I subbed Aldi Mexican Style Shredded cheese. So good. Very moist.
