This Ham and Tomato Pie tastes like Spring! It is packed with fresh basil and ripe tomatoes. I used some leftover Easter ham in this dish. It worked great! The key to this pie is to sauté the ham before adding to the pie crust. That will ensure that all the moisture is cooked out of the ham and the pie won't be watery. Also, make sure to use a regular frozen pie shell and not a deep dish pie shell.

We both loved this Ham and Tomato Pie! It was quick and easy to make and it tasted great! Just serve this with a side salad and you have a complete meal. This is great for brunch, lunch or dinner! We've eaten this a few times and it always a hit. SO simple and SOOO delicious!

Ham and Cheese Hash Brown Casserole is a new favorite in our house. I made this for lunch. Chicken Legs took one bite and said "Hey! This is really good!". He could not stop eating this! I can see why, it is crazy good! Hash browns, ham, parmesan cheese, cheddar cheese, cream of potato soup, and sour cream. YUM!

This casserole is different from our usual potato casseroles because it uses Cream of Potato soup instead of Cream of Chicken soup. It made the casserole super creamy and delicious! I used freshly grated parmesan cheese, but you an certainly use the canned grated cheese if that is what you have in the fridge. 

This Ham and Cheese Hash Brown Casserole can be made ahead of time and refrigerated or frozen for later. This is great for breakfast, lunch or dinner. You can omit the ham if you want to serve this as a side dish. I like to split the casserole into two foil pans and bake one now and freeze one for later.

I hope everyone had a great Easter holiday! If you are like us, you probably have some leftover ham. This Chicken Cordon Bleu Rice Bake is a great recipe to use up that holiday ham. Chicken, ham, swiss cheese, sour cream, chicken soup and rice. This was SOOO delicious. We ate this for dinner and leftover for lunch the next day. We loved this casserole!!

This casserole can be made ahead of time and refrigerated until ready to bake. I haven't frozen it, but I think it would be fine to freeze unbaked. I used instant white rice in this dish. You can substitute instant brown rice or 4 cups of your favorite cooked rice.

Chicken Salad is one of our favorite quick lunches. I will whip up a batch, and we will eat it for a couple of days. I was looking for something a little different for lunch the other day. I decided to "crack out" our favorite chicken salad recipe and bake it. OMG! SOOOO good. We loved the addition of the cheddar, bacon and ranch.

I made this Italian Sausage Soup the other day for lunch and it was a huge hit. Chicken Legs took one bite and was in food heaven! I must agree that this soup is really, really good. I love Italian food, so this was right up my alley. We served the soup with some crusty garlic bread. Perfect!

This Italian Sausage Soup only takes about 30 minutes to make from start to finish. You can't beat that! Cook the sausage, dump everything else in the pot and simmer. Everything cooks in the same pot - including the pasta! I love one-pot dishes! Makes for an easy cleanup. We had this for lunch two days in a row. SO good!

Not only is this corn delicious, it is super easy to make. Just dump everything in the slow cooker and a few hours later you have an amazing side dish! This recipe makes a lot and would be great for a potluck. We made the whole recipe and reheated the corn the next day. It tasted great!
