I hope everyone had a great Easter holiday! If you are like us, you probably have some leftover ham. This Chicken Cordon Bleu Rice Bake is a great recipe to use up that holiday ham. Chicken, ham, swiss cheese, sour cream, chicken soup and rice. This was SOOO delicious. We ate this for dinner and leftover for lunch the next day. We loved this casserole!!

I used instant white rice in this dish. You can substitute instant brown rice or 4 cups of your favorite cooked rice.

You can make this casserole in advance and refrigerate or freeze for later. If you are baking this casserole straight from the refrigerator, you may need to add a few minutes to the cooking time. To bake after freezing, thaw completely and bake as directed below.

Instructions:

  • Preheat oven to 350°F. Spray a 9×13-inch pan with cooking spray. Set aside.
  • In a medium saucepan, bring water to a boil. Add instant rice, cover and turn off heat. Allow to stand for 5 minutes, until all water is absorbed.
  • In a large bowl, combine chicken, ham, chicken soup, sour cream, swiss cheese, milk or water and cooked rice. Spread into prepared pan.
  • Bake for 20-25 minutes, until cheese is melted and bubbly.

  1. This one’s a keeper! I doubled the amount of cheese and added some onion powder, shallot powder, and garlic powder. It was magically delicious!

  2. The only change I made was to use chicken broth to make the rice and added in some extra seasoning such as garlic, onion powder, and paprika. The dish was delicious!

  3. I did not cook the rice ahead of time. I used Uncooked Fast cook brown rice and mixed it in with the soup, sour cream Ham and cheese. I also added 2 cups of water and salt and pepper and dried thyme taste. Then I placed four large frozen (uncooked) chicken breast on top of the rice mixture. Added a little extra Swiss cheese on top of the chicken and baked uncovered at 350 for 60 minutes. It was easy and very good.

    1. You can freeze the casserole. When you are ready to bake it, thaw completely and bake as directed.

  4. I'm thinking you could also use chicken stock instead of water to flavor the rice and then every layer is seasoned. Just an idea!

  5. Seasonings are your friend here. I make a Blackened Cajun Chicken Cordon Bleu with a New Orleans butter cream sauce quite often. I would definitely recommend seasoning the chicken with any kind of Cajun seasoning and possibly adding a 2 teaspoons to the mix to give a little something extra. I have not made this yet but plan to tonight. I will be using my Cajun seasoning to give this flavor. Swiss cheese is definitely the way to go with this dish. It's going to pick up other flavors along the way. SEASON SEASON SEASON!!!!

  6. I've seen the ingredients several times in reciepe "cooked chicken" and it always stops me from cooking the dish. I don't know what the best chicken or how to cook it for this any suggestions?

    1. I love to use rotisserie chicken. You can bake chicken breasts at 425 for about 25 minutes. I will do this if I don't have any rotisserie chicken on hand. Bake several breasts and freeze the extra for later.

  7. Unfortunately mine did not turn out well. The sour cream taste was overwhelming and I used seasoned rotisserie chicken but the dish felt like it needed some other seasoning. I would probably use a different cheese too if I tried it again.
