This Green Chile Chicken Rice-A-Roni Casserole was a HUGE hit in our house. We could not stop eating it! It was even great reheated for lunch the next day. Chicken Legs loved this so much that he had me make this two weeks in a row. It is that delicious! Chicken, rice, cheese, green chiles, cream of chicken soup, and sour cream. So comforting!

This is super easy to make. Start with making the chicken rice-a-roni. While the rice is cooking, chop up some chicken and combine it with sour cream, cream of chicken soup, diced green chiles, cumin, and pepper jack cheese. Add in the cooked rice and spread in a baking dish. Top with more cheese and bake.

This casserole can be made ahead of time and even frozen for later. Such a convenient weeknight meal! I actually have one in the freezer right now!

Just a note on this recipe- I used a box of Chicken Rice-A-Roni for this casserole, but you could definitely use my homemade version of Chicken Rice-A-Roni in this dish. Either is great.

This casserole is comfort food at its best! We serve this with a salad or some black beans and cornbread. Here are a few of our favorite recipes from the blog that go great with this Mexican chicken casserole:

  2. Do you use the regular sized box of ricearoni OR the family size? I’m multiplying the dish by 5 to serve for a big gathering so I can’t mess up! 🤪. Great recipe and Thank you.

  3. Make this at least once a month. I use my fresh roasted Hatch Chilies instead of canned. Gives it heat, but we like love the flavor.

  4. This is one of our family favorites! I’ve been making this about once every other month since the recipe came out years ago. My husband still raves about it every time. Thank you for the easy and delicious dinner.
