Easy Scalloped Potato Recipe with Frozen Hash Browns

Potato casseroles are a favorite in our house, so I am always looking for new ways to prepare them. This is a twist on scalloped potatoes that are made with frozen shredded hashbrowns instead of sliced potatoes. This 3 Ingredient Creamy Hash Crown Casserole couldn’t be any easier and there is no cream of anything soup! There are only three ingredients – hashbrowns, heavy cream, and Parmesan cheese. YUM!

How to Make 3 Ingredient Creamy Hash Brown Casserole

This Creamy Hashbrown Casserole literally only takes a minute to assemble and is ready to eat in about 45 minutes. Place a bag of frozen shredded hash brown potatoes in a baking dish. Stir together heavy whipping cream, salt, and pepper. Pour over the hash browns. Pop the dish in the oven and bake. Stir the potatoes halfway through the cooking time. Top the potatoes with parmesan cheese and bake until melted. Remove from the oven and enjoy!

  • Get creative with any extra seasonings. We like garlic powder and seasoned salt. This is also great with some fresh rosemary!
  • If you aren’t a fan of Parmesan cheese, feel free to top the potatoes with your favorite cheese. Any cheese will taste delicious!
  • I thawed the frozen hash browns before baking. If you are short on time, pop the bag in the microwave for a few minutes.
  • You can use freshly grated parmesan cheese or the cheese in the green can. Either one is just fine.
  • Is Creamy Hash Brown Casserole gluten-free? Yes! All of the ingredients in this dish are gluten-free.

  • Preheat oven to 400ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Spread thawed hash brown potatoes in bottom of pan. Stir together heavy cream, salt, garlic powder (if using) and pepper. Pour over potatoes.
  • Bake for 30 minutes, stirring halfway through baking time. Remove potatoes from oven, stir and top with parmesan cheese. Bake for an additional 10 to 15 minutes, until golden and bubbly.

  1. This tasted great and my whole family ate it. So I say this is a great recipe! But the cream “broke” and I had a layer of oil on the bottom that I had to attempt to drain before serving. I’d love it if anyone has any tips to avoid this next time? Maybe because I used cheapo store brand ingredients? I’ll still make it again anyway because it was so easy and great taste.

    1. I’ve never had that happen, so I’m not sure what went wrong. Was the heavy cream fresh? Maybe shake the carton before adding it to the pan next time.

    1. I think you need the fat in the heavy cream to make this work. However, you can make it however you would like.
