Peanut Butter Frito Cookies – sweet and salty goodness! These cookies are CRAZY good! We love potato chip cookies, so why not corn chip cookies! Peanut butter, butter, shortening, eggs, vanilla, flour, baking soda, and crushed Frito corn chips. We could not stop eating these cookies. YUM! Can make in advance and freeze the cookie dough balls for later. Can also freeze baked cookies. Great for parties and tailgating.

Easy Potato Chip Cookies

One of my favorite snacks is a Frito with peanut butter on top. I know it sounds crazy (at least Chicken Legs said so), but it tastes really good. Well, if you love Fritos and peanut butter like I do! 

I started to wonder what a peanut butter cookie with Fritos in it would taste like. I decided to give it a whirl. Well, it tastes great. Even Chicken Legs agreed! Sweet and salty in one bite!!! The cookies were soft with a little crunch from the Fritos. We both had a hard time controlling ourselves around these cookies!

How to Make Peanut Butter Frito Cookies

These cookies are very easy to make. Mix together sugar, brown sugar, butter, shortening, and peanut butter. Add the eggs and vanilla. Add flour and baking soda. Mix in crushed Frito corn chips. Scoop cookie dough and roll cookie dough balls in sugar. Place on a cookie sheet and bake.

  • Can use smooth or crunchy peanut butter.
  • You can scoop the cookie dough and freeze the dough balls for a quick treat later,
  • Can freeze baked cookies for later. I store them in ziplock freezer bags.

The recipe makes a ton, so they are perfect for sharing. I’m pretty sure that I will be taking a batch to our tailgate this weekend. They also make a great homemade holiday gift! Give these a try. I promise you will LOVE them!

Ingredients:

Instructions:

  • Preheat oven to 350ºF.
  • Cream together the sugars, butter, shortening, and peanut butter. Add the eggs and vanilla. Mixing well.
  • Sift the dry ingredients together and add gradually until blended well. Mix in the crushed Frito corn chips.
  • Scoop cookie dough using a medium cookie scoop. Roll cookie dough balls into ½ cup sugar. Place on an ungreased cookie sheet (don’t mash with a fork).
  • Bake for 11-13 minutes.

  2. recipie states combine the sugars and then when cookies are mixed to roll them in sugar so do you need more than the one cup of white sugar???
