Thanksgiving is only a few weeks away. I am already knee deep in holiday meal planning. I wanted to share our menu and my plan to keep the meal prep stress free! I make as much food ahead of time as possible, so the day of the big meal isn’t as much work.

I have listed out the menu, the preparation steps and provided a shopping list at the end of the post.
I hope this helps make your Thanksgiving Meal Stress-Free!!

Here is our menu:
The Plan:
1 Week before Thanksgiving
Prepare Ritz Carlton Pumpkin Cheesecake and freeze.
4 Days before Thanksgiving
Prepare dough for 4-Day Cloverleaf Rolls and refrigerate.
4-Day Cloverleaf Rolls - dough can be made up to 4 days in advance. GREAT timesaver for holiday meal planning!! Yeast, water, sugar, shortening, egg, salt flour and butter. SO delicious! Makes 2 dozen rolls, perfect for the big holiday meal and leftovers!!
3 Days before Thanksgiving
Store in ziplock bags until Thanksgiving day.
Southern Cornbread Recipe - family recipe passed down for generations. THE BEST! Great with chili and soups. We also use it in our Southern Cornbread Dressing at the holidays.
2 Days before Thanksgiving
Thaw Turkey
Oatmeal Pie - tastes as good as pecan pie without the expense! This pie can be made several days in advance. Serve warm with ice cream. YUM! Great for the holidays.
1 Day before Thanksgiving
Cook Italian Green Beans, refrigerate
Assemble The Ultimate Squash Casserole, refrigerate unbaked
Assemble Butternut Squash Casserole, refrigerate unbaked
Bake Pumpkin Crunch , refrigerate
Remove Ritz Carlton Pumpkin Cheesecake from freezer and refrigerate


The Ultimate Squash Casserole - squash, bell pepper, onion, cream of mushroom soup, cheddar cheese, eggs, chicken base topped with Ritz crackers and butter. Even squash haters will love this casserole! SO easy and SO delicious. Took this to a potluck and everyone asked for the recipe!
Thanksgiving Day
Mix together Mom’s Cornbread Dressing and bake with Turkey
Remove Cloverleaf Rolls dough from refrigerator and assemble rolls. Rise for 1 hour and bake.
Reheat Italian Green Beans on stovetop
30 minutes before the turkey is done, bake Butternut Squash Casserole and The Ultimate Squash Casserole
15 minutes before turkey is done, prepare Ranch Mashed Potatoes
45 minutes before dessert, prepare and bake Pecan Cobbler
Prepare caramel sauce for Ritz Carlton Pumpkin Cheesecake 
Ranch Mashed Potatoes - yukon gold potatoes, butter, Ranch dressing and bacon. Super quick side dish that packs tons of flavor!
Pecan Cobbler - THE BEST dessert ever! Magically makes an amazing sauce as it bakes. Butter, flour, sugar, milk, vanilla, pecans, toffee bits and boiling water. Serve with vanilla ice cream or fresh whipped cream. Perfect for the holidays!
