These Meatball Sliders are perfect for watching all the bowl games this week and for snacking on at your New Year's Eve Parties. They are so simple and taste fantastic! I think just about anything would taste great stuffed into a Hawaiian roll, don't you?!?

These Meatball Sliders are so simple to make. Spread a yummy cream cheese mixture on the bottom of the rolls and top with some sauce and mozzarella cheese. Cut out a hole in the top of roll and stuff a meatball inside. Brush some garlic butter and parmesan on top and you are ready to bake! The best part is they are ready to eat in under 30 minutes! Quick, easy and delicious! You can't beat that!

A traditional Cuban Sandwich has pork, ham, pickles, Swiss and mustard. Since we have a lot of leftover turkey from the holiday, I decided to swap the pork for turkey and wrap it all in puff pastry. Let me tell you, these Turkey Cuban Pastry Puffs were DELICIOUS! One bite and we were both in heaven! 

These Turkey Cuban Pastry Puffs can be made ahead of time and frozen. If you freeze them, let them thaw for about an hour or so before brushing them with the egg wash and baking.

These are perfect or a quick lunch or dinner, tailgating or your upcoming New Year's Party!

Black eyed peas are a must for New Year's in the south. You need to eat black eyed peas for good luck in the new year. I never ever take any chances! We always have black eyed peas on New Year's Day!

This year we are having this Slow Cooker Hopping John. Black eyed peas slow cooked with smoked sausage, tomatoes, peppers, seasonings and rice. SO simple and so delicious! All you need is some fresh cornbread and you have the perfect New Year's Day meal! This makes a TON! Invite some friends over to watch all the bowl games and have a bowl of Hopping John!

Taco Soup

Hamburger, pinto beans, green beans, ranch beans, stewed tomatoes, beer, diced tomatoes and green chiles, taco seasoning and Ranch dressing mix. We make this at least twice a month. SO good!! Can freeze leftovers for a quick meal later. You can also make this in the slow cooker.

We are obsessed with the Taco Soup. I've made this so many times that I've lost count. This version is different that my usual version. This version of Taco Soup has a bottle of beer and some green beans added. It is CRAZY good! Chicken Legs requests this at least once a week. It makes a lot. It tastes great reheated and you can even freeze the leftovers for later.

I make this Taco Soup on the stove and it is ready in about 20 minutes. You can definitely make this in the slow cooker. I would cook it on LOW for 6 to 8 hours. This would be great for a party or potluck. Just whip up a batch of cornbread and you have a super quick and easy meal!!

Happy Festivus! I hope everyone has their pole and is ready for the Airing of Grievances and Feats of Strength later tonight. We are ready! We are also celebrating with these yummy Ham and Cheese Empanadas. Little pies stuffed with an amazing ham and cheese mixture. This recipe will make 48 empanadas. This recipe is perfect for a crowd! They are never any leftovers!

You can make the filling ahead of time and fill the pie crust when you are ready to bake them. You could even stuff the pie crust and freeze the empanadas unbaked or baked. I love make ahead recipes! These are a great way to use up any leftover holiday ham!! They are perfect for watching all the championship games next week! I know we will having these at our watch party. SO good!

Italian Noodle Casserole

Italian Noodle Casserole - this was a HUGE hit in our house. Everyone cleaned their plates and asked for seconds! Even the picky eaters!! Hamburger, garlic, oregano, onion, Worcestershire sauce, tomato sauce, egg noodles, cream cheese, cottage cheese, sour cream, mozzarella and cheddar cheese. Can freeze for later. It is definitely going into the dinner rotation!

I am a sucker for a good Italian casserole and this Italian Noodle Casserole is no exception. It was AMAZING! It is kind of like a combination of my Amish Country Casserole and my Cream Cheese Lasagna. There are elements of each casserole in this recipe, and it is fan-freaking-tastic! Hamburger, cottage cheese, cream cheese, sour cream, tomato sauce, mozzarella and cheddar cheese. All my favorites in one dish!

This recipe makes a good bit of food. It was enough for us to have it for dinner and reheated for lunch and dinner the next night. This would also make a great freezer meal. Assemble the casserole, cover it with foil and freeze it unbaked. When you are ready to cook the casserole, let it thaw in the fridge all day and then bake it. You may need to add a few minutes to the baking time if the casserole isn't 100% thawed when you put it in the oven.

Baked Feta

Baked Feta - feta marinated in olive oil, red pepper flakes, lemon zest, garlic, pepper, oregano and baked. SO easy and SOOOO delicious! Great for parties! Serve with french bread slices or pita chips.

This Baked Feta was inspired by a local pizza place. It is so simple, yet it tastes amazing. I ate way too much of this dip. Feta marinated overnight in olive oil and herbs and then baked. SOOO good! It makes a fantastic holiday party appetizer!

I marinated the feta in a ziplock bag and let it hang out in the fridge overnight before baking it. If you don't have that much time, just marinate it as long as you can before baking.

We served the feta with some festive bread slices. I used some canapé bread tubes to make the star shapes. I put a can of refrigerated French bread in the tube and baked it. Once it had cooled, I sliced it into thin slices. It makes a fun presentation! If you don't want to buy the bread tubes, you can serve the Baked Feta with some regular French bread or crackers.

Lemon Chess Cheesecake Pie - two favorites in one dessert! Quick cheesecake layer on the bottom and a delicious homemade lemon chess pie on top! Pie crust, cream cheese, sugar, eggs, butter, milk, lemon juice, lemon rind, flour, cornmeal. Can make ahead of time and refrigerate until ready to serve. Top with fresh homemade whipped cream. SO good! A MUST for your holiday meal!!

We always have pie at the holidays and this Lemon Chess Cheesecake Pie is a MUST. Y'all, this is SO good. I am not a big fan of sweets, but this Lemon Chess Cheesecake Pie kept calling me to the fridge to take a bite. O-M-G!

This pie combines two of my favorites into one - cheesecake and Lemon Chess Pie. Not super sweet, just super delicious. This was so easy to make and can be made a few days ahead of time and refrigerated until ready to serve. It actually tastes better after it has been in the refrigerator overnight. As I said earlier, this pie is to-die-for! It is a must for your holiday meal. Trust me! 

We served the pie with a dollop of fresh whipped cream. To make the whipped cream, whip 1 cup of heavy cream with 1/4 cup powdered sugar and 1 tsp of vanilla. Make sure the heavy cream is really cold before whipping. I also like to chill my mixing bowl!
