White Chicken Chili Cornbread Muffins - quick cornbread muffins stuffed with chicken, white beans, green chilies, cumin, garlic, oregano and pepper jack cheese. Everyone loved these muffins! Comfort food at its best! Great for lunch, dinner or tailgating. Ready in 20 minutes!!

Fall is in the air. School is back in session and football has started. The only thing missing is the cooler temperatures! Mother Nature, please send the cooler weather to the South soon!! I'm not letting the weather keep me from starting my Fall cooking. I was in the mood for some white chicken chili and cornbread the other night and decided to combine them into one dish!

These White Chicken Chili Cornbread Muffins were great! I took them out of the oven and Chicken Legs said "Something smells really good!". We both couldn't wait to dive into these. The best part about this recipe is that it is super easy to make. They only took about 20 minutes from start to finish.

To keep things quick and easy, I used some rotisserie chicken and a couple of packages of Martha White Cornbread Mix. I used one package of Sweet Yellow Cornbread and one package of Mexican Style Cornbread mix. We loved the extra flavor in the muffins from the Mexican Style Cornbread mix. We both loved these White Chicken Chili Cornbread Muffins! We ate them for dinner and reheated for lunch the next day. These would be great for a tailgate too!!

Best Burgers EVER!

Best Burgers EVER! - these are hands down the best burgers I've ever eaten! SO good!!! Hamburger, onion, basil, teriyaki sauce, bread crumbs, parmesan cheese. We like to double the recipe and freeze uncooked hamburgers for a quick meal later. Great for tailgating!!

Stop what you are doing and add these burgers to your Tailgating and Labor Day menu. They are hands down the BEST burgers EVER! EVER! We made this last weekend and are already planning on making them again this coming weekend. They are that good!

The hamburger is mixed with onion powder, basil, teriyaki sauce, salt, pepper, bread crumbs and parmesan cheese. I divided the meat into three equal parts and used my hamburger press to form the patties. I am going to double the recipe this weekend and freeze some of the patties for later.

I used ground beef with 75/25 mix. I think burgers need a little more fat in the meat when you are grilling them. They tend to fall apart and dry out if you use really lean beef. That is just our experience.

We love to grill burgers, but I also like to cook burgers in my cast iron skillet. They only take a few minutes to make in the skillet. You can see the instructions here: How to Cook Burgers in a Cast Iron Skillet

One Pot Chili Cheese Pasta

One Pot Chili Cheese Pasta - everything cooks in the same skillet, even the pasta!! Canned chili, cream cheese, diced tomatoes, chicken broth, pasta, garlic, chili powder and cheddar cheese. Everyone cleaned their plate! So quick and easy to make. Ready in under 20 minutes!

This One Pot Chili Cheese Pasta was ready in under 20 minutes, and everything cooks in the same skillet, even the pasta! Woohoo! This dish was inspired by one of my favorite tailgating dip - Chili Cheese Dip. The dip is incredible and it always the first thing to go at our tailgates! I decided to take those amazing flavors and put it in an easy one pot pasta dish. If the dip was good, I was sure that it would be even better in a yummy pasta dish. I was right this stuff was amazing! We both gobbled this up and went back for seconds. Chicken Legs has already requested this for dinner again next week. It is perfect for watching football!!
