Alice Springs Chicken Bites {Football Friday}

Alice Springs Chicken Bites - chicken, bacon, honey mustard, cheese and mushrooms baked in wonton wrappers. SO good! Can make ahead and bake later. Great for parties and tailgating. These are always the first thing to go!!

Alice Springs Chicken is my favorite thing to eat at Outback. I love all the flavors - chicken, honey mustard, bacon, mushrooms and cheese. I decided to put all those flavors in a yummy tailgating snack. OMG!! SO good! I could not stop eating these. Chicken Legs and I ate these for lunch and loved them.

You can mix up the chicken mixture ahead of time and filled into the wonton wrappers when you are ready to bake. These Alice Springs Chicken Bites taste great warm or at room temperature. I have also reheated them for lunch the next day. They tasted great! Make these for your next football tailgate or party. I promise they will be a hit!!

3 Ingredient Creamy Hashbrown Casserole

3 Ingredient Creamy Hashbrown Casserole - frozen hashbrowns, heavy cream and parmesan cheese. We like to add garlic too!! SO easy to make and they taste amazing. No prep work! A new favorite in our house. Also great for a dinner party.

Potato casseroles are a favorite in our house, so I am always looking for new ways to prepare them. This Creamy Hashbrown Casserole couldn't be any easier and there is no cream of anything soup! Just hashbrowns, heavy cream and Parmesan cheese.

This Creamy Hashbrown Casserole literally only takes a minute to assemble and is ready to eat in about 45 minutes. We seasoned the potatoes with garlic, salt and pepper. You could also add some rosemary! If you aren't a fan of Parmesan cheese, feel free to top the potatoes with your favorite cheese. Any cheese will taste delicious!

Southwestern Chicken Tortellini Soup

Southwestern Chicken Tortellini Soup - ready in under 30 minutes!! Chicken broth, salsa, carrots, corn, onion, frozen cheese tortellini and evaporated milk. Very hearty soup. Great weeknight meal. Everyone loved this! We ate it for dinner and reheated for lunch the next day. Delicious!

It's finally soup season. YAY! This Southwestern Chicken Tortellini Soup was so simple and tasted fantastic!! The best part is that it only takes less than 30 minutes from start to finish. We loved everything about this soup. You can't go wrong when you start with chicken, salsa, and cheese tortellini.  We ate this two days in a row and it tasted just as good reheated the next day. Serve this soup with some quick cornbread muffins for an easy weeknight meal!

Cheesy Chicken and Spinach Pasta Bake

Cheesy Chicken and Spinach Pasta Bake - pasta, onion, spinach, chicken, tomatoes, chive-and-onion cream cheese, garlic and mozzarella. This casserole was a HUGE hit!! Everyone cleaned their plate! Can make ahead of time and refrigerate until ready to bake. Great potluck meal!

This Cheesy Chicken and Spinach Pasta Bake is a new favorite. We ate this for dinner the other night, and I am ready to make it again! This pasta bake is so easy to make and tastes incredible. It is easy enough for a weeknight, but it would also be a great dish for company. You  can even make this ahead of time and refrigerate it overnight. I love make ahead dishes!

The secret ingredient in this Cheesy Chicken and Spinach Pasta Bake is a container of chive and onion cream cheese. It adds lots of flavor and makes this pasta bake super creamy. This smelled amazing while it was baking. We couldn't wait to dig in! All you need is a little side salad and a garlic roll and dinner is ready!!!

The Neon Museum Boneyard - Las Vegas, NV

The Neon Museum Boneyard - Las Vegas, NV - a must see on your next Vegas trip. Located at the North end of Las Vegas Boulevard. The night tour is fantastic!! Book early! The tours sell out quickly!

On our latest trip to Las Vegas we finally went to the Neon Museum Boneyard. It has been on my list for years, and I finally got tickets for a night tour.

The museum boneyard opened in 2012. It is located at the north end of Las Vegas Blvd. 
It is open 7 days a week and they offer hour long tours every day.

The Museum includes nine restored signs. The gallery includes the Lucky Cuss Motel, the Bow & Arrow Motel, The Silver Slipper, Society Cleaners, Binion's Horseshoe, the Normandie Motel, the Hacienda horse and rider, the Landmark and 5th Street Liquors.

As I said, we did the night tour. It was great! The guide was very knowledgable and enthusiastic. 
I took tons of photos. The 2-acre campus is light with lights that change colors, giving the illusion that all the signs are lit up. We both really enjoyed the tour and highly recommend it! 

One note - the tours fill up quickly; make sure to book your tour well in advance.

Killer Bean Dip {Football Friday}

Killer Bean Dip - only 5 ingredients! Refried beans, hamburger, taco seasoning, salsa and Velveeta. Can make on the stove or in the slow cooker. This stuff is CRAZY good! Great for tailgating!! I could make a meal out of this dip. Great Mexican dip!!

This Killer Bean Dip is just that - KILLER! SO good! We actually ate this for lunch the day I tested the recipe. Hamburger, taco seasoning, salsa, velvety and refried beans. All of my favorites in one dip! Chicken Legs isn't' a fan of refried beans, but he loved this dip!

I made this on the stove, but you could also make it in the microwave or slow cooker. Either way it will taste amazing! We ate this with some Fritos, but it would be great with tortilla chips or even some veggies. Serve this dip at your next tailgate/football party. I promise it will be a touchdown!!

Parmesan Garlic Monkey Bread Muffins

Parmesan Garlic Monkey Bread Muffins - only 5 ingredients and ready in 10 minutes. Refrigerated biscuits, butter, Italian seasoning, garlic and parmesan cheese. We ate way too many of these! SO good!! Serve with some warm pizza sauce!

We served these Parmesan Garlic Monkey Bread Muffins with the Meatball Lasagna I shared yesterday. They were crazy good! I could have made a meal out of them. They are dangerously delicious! They are also very simple to make. Cut up refrigerated biscuits and toss them in butter, garlic and Parmesan cheese. They smelled amazing while they were in the oven. We both ate WAY too many of these!! It was worth every single calorie. YUM!

Meatball Lasagna

Meatball Lasagna - no meat to brown and no noodles to boil. Great weeknight casserole! Ricotta, mozzarella, parmesan, chive-and-onion cream cheese, pasta sauce, egg roll wrappers and frozen meatballs. Ready for the oven in minutes!! Everyone loved this lasagna!! SO easy and SO delicious!

This lasagna is a fantastic weeknight meal. There is not meat to brown and no noodles to boil. It is ready for the oven in a flash! Woohoo!!! Can't beat that.

I love lasagna, but my homemade lasagna takes a lot of time to make. This Meatball Lasagna was ready to bake by the time the oven had preheated. Easy and super delicious! We loved this! It was great for dinner, but I think it was even better reheated for lunch the next day. All you need is a few garlic rolls and a salad for a fabulous weeknight meal. This would be great for a potluck too. It makes a ton!

Buddy V's Carbonara with Sausage

Bucatini Carbonara with Sausage - recipe from Buddy V's in Las Vegas. SO easy to make! Only takes about 10 minutes from start to finish! Bucatini, eggs, parmesan cheese, bacon, garlic, pepper and sausage. This was SO good that I wanted to lick the bowl! Easy enough for a weeknight.

This recipe was inspired by our most recent trip to Vegas. We ate lunch at Buddy V's (The Cake Boss). We shared an order of meatballs and a bowl of carbonara. The meatballs were really good, but the carbonara was AMAZING! It was one of the best things we've ever eaten. We literally fought over the last few bites. I knew I had to recreate the pasta at home.

I bought Buddy's cookbook while we were still sitting in the restaurant, and the recipe couldn't be any simpler. Pasta tossed with egg yolks, Parmesan, bacon, and garlic. We added some Italian sausage because that is how we ate it in the restaurant. This was just as incredible at home as it was in Vegas. The carbonara only took a few minutes to make - basically just the time it took to cook the pasta. LOVE!! Chicken Legs has already requested this again! I can't wait!
