Taco Ranch Chicken

Taco Ranch Chicken - our favorite! SO easy and this tastes delicious! Only 6 ingredients - olive oil, Ranch dressing, taco seasoning, lime juice, vinegar and chicken. Great on its own or on top of a salad or in tacos and quesadillas. We make this at least  once a week! Such a quick and easy Mexican chicken recipe!

Cinco de Mayo is just around the corner and we are busy testing out recipes for our celebration! This Taco Ranch Chicken is definitely going on the menu! It was SOOOOO good!!!! Chicken marinated in ranch dressing, taco seasoning, olive oil and lime juice. We served this with some rice and black beans, but it would also be great chopped up in tacos and quesadillas!!

The key to evenly cooked grilled chicken is to pound your chicken breasts to an even thickness. We do this every single time that we grill chicken and it is always tender and juicy. We like to let this Taco Ranch Chicken marinate overnight, but if you don't have that much time a few hours will do just fine. This chicken was tender, juicy and full of great flavor. I cannot wait to make this again for Cinco de Mayo!!!

Chocolate Bourbon Pound Cake

Flour, cocoa powder, chocolate pudding mix, baking soda, butter, sugar, eggs, sour cream and bourbon. Can make ahead of time and freeze for later. Perfect for potlucks, cookouts and watching the Kentucky Derby! Everyone loves this easy pound cake dessert recipe!

Pound Cakes are one of my favorite desserts to make. They are so easy to throw together and taste great. They can also be made ahead of time and even frozen for later. You really can't beat them! I've been experimenting with flavors and came up with this Chocolate Bourbon Pound Cake. OMG! SO good!! Chocolate + Bourbon = heaven! 

This cake is incredibly good. Delicious chocolate with a hint of bourbon. Just to make this Chocolate Bourbon Pound Cake even more delicious, I topped it with an easy bourbon glaze. YUM! We served the cake with some fresh whipped cream and mint. We also had a few slices topped with vanilla ice cream. This would be perfect for snacking on while watching the Kentucky Derby with a Mint Julep in hand!

Orange Chili Grilled Chicken

Orange Chili Grilled Chicken - seriously delicious! Only 4 ingredients! Chicken, sweet chili sauce, honey and orange juice. Grill and baste with reserved sauce. SO much great flavor!!! We always double the recipe for leftovers - great on a salad or in a wrap. We LOVE this easy chicken marinade recipe!!!

Grilling season is in full swing at our house. We had a super mild winter this year, so we have actually never stopped grilling! This Orange Chili Grilled Chicken has become a fast favorite. It is super easy to make and has TONS of great flavor. We used this marinade with some chicken tenders, but it would also be great on chicken breasts and chicken thighs.

This recipe uses sweet chili sauce. I used Frank's Chili Sauce. I found it near the hot sauce and BBQ sauce. The sweet chili sauce isn't spicy at all. It just gives the chicken a little hint of sweet and spicy. It complements the orange juice perfectly!! We've made this several times over the past month and really have enjoyed it every single time. I like to chop up the leftover chicken and put it on top of a salad or in a sandwich wrap.

Cheesy Zucchini Squares

Cheesy Zucchini Squares - DELICIOUS side dish or breakfast casserole! Perfect way to use up all that yummy summer squash! Zucchini, flour, baking powder, milk, eggs, green chiles and Monterey Jack cheese. We served this as a side dish with our grilled meats and had the leftovers for breakfast! SO YUMMY! Everyone raves about this simple side dish recipe!

Zucchini has become one of our favorite spring vegetables. I am always looking for different ways to prepare it. I came across a recipe for Cheesy Zucchini Squares and decided to give it a try. We both took one bite and were in foodie heaven. SO good! We served this as side dish with some grilled chicken, but it would also be great for breakfast! The zucchini and cheese are baked in an egg mixture, so it is similar to a veggie breakfast casserole.

This recipe makes a ton! It would be great for a spring/summer potluck.The casserole has a little kick from some green chilies. If you are worried about the heat, you can certainly leave out the green chiles. These Cheesy Zucchini Squares got 5 stars in our house. We will definitely be making this dish again and again.

Kentucky Hot Brown Mac and Cheese

Kentucky Hot Brown Mac and Cheese - THE BEST!!! We ate this two weeks in a row. Seriously DELICIOUS! Macaroni, flour, butter, onion, salt, pepper, milk, gruyere cheese, turkey, bacon, tomatoes. All the flavors of a  Kentucky Hot Brown Sandwich in pasta. Everyone cleaned their plate and went back for seconds. This is a new favorite. GREAT macaroni and cheese recipe!

The Kentucky Derby is coming up. Now, I'm not a horse racing fan, but we always seem to watch the derby. I find the Derby more of an excuse to eat and drink with friends! There is nothing better than sipping a Mint Julep and eating some Kentucky Hot Browns. I have several variations of the original on the blog, but this Kentucky Hot Brown Mac & Cheese might be my favorite. Pasta loaded with turkey and bacon and tossed in a Gruyere cheese sauce. O-M-G! SO decadent!

For this recipe I used some really thick sliced turkey deli meat. I wanted to have nice bites of turkey throughout the mac and cheese. I used Gruyere cheese in the cheese sauce. Gruyere can be expensive, so feel free to substitute Swiss cheese if you don't want to splurge on the Gruyere. I think it is totally worth the splurge!

We topped this Kentucky Hot Brown Mac & Cheese with some fresh diced tomatoes. This has all the flavors of a hot brown but tossed with pasta. We loved this dish! I cannot wait to make it again for the Derby!

Segovia Spain {Day Trip from Madrid}

Segovia, Spain - a great day trip from Madrid. The Roman Aqueduct is not to be missed. Make sure to stay until sunset to see the shadows! The Cathedral of Segovia is beautiful and the Alcazar of Segovia was an inspiration for Cinderella's Castle! A must on your trip to Spain!

On our second day in Madrid, we took another day trip. We took the train into Segovia. It was about an hour train ride. Unlike Toledo, you can't walk from the train station to the old city. Fortunately, there are plenty of cabs to take you right down to the city. They are also plenty of cabs so when you want to return to the train station.

Segovia is very beautiful! It is also very walkable. We walked a ton. I felt like we walked uphill all day! It was a lot of fun, and I'm so glad that we went.

Boss Peanut Butter Cookies

Boss Peanut Butter Cookies - hands down THE BEST peanut butter cookies I've ever eaten! Recipe from The Cake Boss. The secret ingredient makes all the difference!!! Peanut butter, crisco, brown sugar, sweetened condensed milk, vanilla, egg, flour, baking powder, chocolate chips, peanut butter chips. SO soft and delicious. Can make ahead of time and refrigerate dough for a week or freeze for 2 months. These are incredible! Seriously the best peanut butter cookies recipe!

One of our must eat places in Las Vegas is at Carlo's Bakery in The Palazzo. It is the bakery connected to Buddy V's restaurant. In case you aren't familiar with either of these places, they are the restaurant and bakery from The Cake Boss on TLC. I'm not really a fan of the TV show, but I am a HUGE fan of both restaurants!

My favorite thing to get at Carlo's Bakery is cookies. They are the best bakery cookies EVER. I'm not usually fan of store-bought cookies, but the cookies from Carlo's Bakery are second to none. They taste as good as homemade.

I was looking at some of Buddy V's cookbooks on Amazon and read a review about the peanut butter cookies. The cookbook I was looking at was only $1.99, so I threw caution into the wind and bought it. What made these Boss Peanut Butter Cookies unique (to me) was that they are made with a can of sweetened condensed milk. OMG! I had to make them ASAP.

These Boss Peanut Butter Cookies are incredible. So soft and so yummy! I loved the addition of milk chocolate and peanut butter chips. I am a total sucker for anything peanut butter and chocolate, so these were right up my alley!! Give them a try! I promise they will be a hit!

Chicken Cordon Bleu Tetrazzini

Chicken Cordon Bleu Tetrazzini - we are obsessed with this yummy casserole!! Chicken, ham, swiss cheese, mushroom soup, Alfredo sauce, chicken broth, pasta and parmesan. So quick and easy to make. Can make ahead of time and freeze for later. We make this at least once a month. It always receives rave reviews!!! We love this easy casserole recipe.

Make sure to save some of that Easter ham for this Chicken Cordon Bleu Tetrazzini. O-M-G! This is a new favorite. We both absolutely LOVED this casserole. Chicken, ham, Alfredo sauce, Swiss cheese and pasta. Heaven! You can make this ahead of time and refrigerate or even freeze for later. I love easy make ahead recipes!

I used a tub of refrigerated Alfredo sauce in this Chicken Cordon Bleu Tetrazzini. I found it next to the refrigerated fresh pasta near the cheese at my grocery store. If you can't find the refrigerated sauce, you could use an equal amount of the jarred Alfredo sauce.

This Chicken Cordon Bleu Tetrazzini is a new favorite in our house. I can't wait to make it again next week with some of our leftover ham. I just love the flavor combination! I am getting hungry just thinking about this yummy casserole!!!

Slow Cooker Cheddar Corn

Slow Cooker Cheddar Corn - this stuff is AMAZING!! Just dump everything in the slow cooker and let it work its magic! Frozen corn, cream cheese, cheddar cheese, butter, heavy cream, salt and pepper. Great side dish for a potluck! There is never any left! Such an easy side dish recipe!!

Corn is one of my all-time favorite veggies. It could only be that much better when you add some yummy cheddar cheese and cream cheese to the mix. YUM! This Slow Cooker Cheddar Corn was a big hit at our house. I loved that I could just dump everything in the slow cooker and let it work its magic. So easy!

This recipe makes a lot of corn. It would be perfect for the upcoming Easter holiday or a summer cookout. We loved this Slow Cooker Cheddar Corn. It was seriously one of the best corn dishes we've ever eaten. I mean it couldn't be bad with cheddar, cream cheese and heavy cream. 🙀 This is definitely not health food, but it is absolutely delicious food!!
