Gooey German Chocolate Bars

Gooey German Chocolate Bars - ooey, gooey heaven in a pan! These things are SOOOO good!!! Coconut, pecans, german chocolate cake mix, cream cheese, butter and powdered sugar. Only takes a minute to make. The hardest part is waiting on the bars to cool!!! Great for Valentine's Day and summer potlucks!

I got this recipe from my Mom when we were down for the holidays. She said these Gooey German Chocolate Bars were great, so I decided to give them a try. OMG! She was right. These are CRAZY good!!! Coconut, pecans, chocolate cake filled with an ooey gooey filling of cream cheese, butter and powdered sugar.

These bars only take a few minutes to make. The hardest part about this recipe is waiting on the bars to cool. These are better after they have been baked, cooled and refrigerated for a few hours. We tried them warm and then cooled. We both preferred the bars after they had been in the refrigerator for a few hours. The flavors had time to come together and you could really taste the coconut and pecans.

These Gooey German Chocolate Bars would make a great treat for Valentine's Day! Chicken Legs has already requested them as his dessert. 💝

The Palazzo - Las Vegas

I get a lot of questions about where we stay in Las Vegas. We have stayed in several places up and down the strip. Mandalay Bay, MGM Grand, Aria, The Mirage, They Wynn, The Venetian and The Palazzo.

Out of everywhere we've stayed, The Palazzo is our favorite. We love the location and the all the rooms are suites! Woohoo! We aren't in the room a lot, but it is really nice to have the extra space. We love all the shops and restaurants inside The Palazzo and The Venetian. We also love how close it is to The Forum Shops at Caesars.

Today I am giving you a tour of our room at The Palazzo from our most recent stay.

TGIF!!! We are one week away from the Super Bowl!!! It should be a great game! I am already working on our menu. We usually stay home and eat party food for the game. I do know one thing that is definitely going on the menu, these Bacon Cheeseburger Toasts. OMG! They are SO good!!!! Hamburger, bacon, Worcestershire, Velveeta on top of rye bread. We LOVE these things. Great for parties and a light lunch or dinner.

I make these all the time and freeze them for later. I assemble them and put them on a baking pan in the freezer. Once they are frozen, I put them in a freezer bag. I pull them out when we are ready to eat them and cook them. I already have my batch in the freezer ready to go for the Super Bowl!

Chocolate Chip Cookie Dough Cupcakes

Chocolate Chip Cookie Dough Cupcakes - seriously the BEST cupcakes EVER! SO easy! Cake mix, refrigerated cookie dough and homemade buttercream. SO easy and they taste AMAZING! Easy and delicious dessert recipe!!

These Cookie Dough Cupcakes are dangerous! I gave some to a friend and she texted me that they were the BEST cupcake she'd ever eaten! WOOHOO! Not only are these cupcakes crazy good, they are super simple to make. I used a box of cake mix and some refrigerated cookie dough for the cupcakes. I topped the cupcakes with my famous homemade buttercream. Divine!!!

I love the simplicity of these cupcakes. They are great for a party, classroom or work group. They don't need to be refrigerated, but you can if you prefer. If you do refrigerate them, I suggest taking them out a few hours before you serve them so the frosting isn't hard.

Southwestern Black Beans - only 4 ingredients! Black beans, diced tomatoes and green chiles, chili powder and lime juice. We make them all the time! Ready in 5 minutes!! Such a quick and easy side dish!!

We make these Southwestern Black Beans every time we eat Mexican food at home. They are SO easy and SOOOOO delicious! There are only 4 ingredients and they only take about 5 minutes to make. You are just heating them through and then serving. We eat these beans with all of our Mexican casseroles and with taco night. They are our go-to side. I've been making these for years! If you are worried about the beans being too spicy, make sure to buy MILD diced tomatoes and green chiles.

Pork Rind Crusted Chicken Tenders

Pork Rind Crusted Chicken Tenders - oven baked chicken that is SO crispy and delicious! Everyone LOVED this chicken! Chicken tenders coated in crushed pork rinds, panko bread crumbs, cajun seasoning, eggs, and mayonnaise. Dip in your favorite dipping sauce or chop up on top of a salad. These are in our monthly dinner rotation. SO good! Can freeze coated tenders for later too!!!

These Pork Rind Crusted Chicken Tenders are oven baked and SO crispy & delicious! I'm not a big pork rinds person, but they worked fantastic in this recipe!!! Who would have thought?!?!

The chicken tenders are coated in a mixture of pork rinds and panko bread crumbs. That combination worked great! I baked the tenders on a foil-lined baking sheet and lightly sprayed them with cooking spray. They were delicious! The coating stayed on, and the chicken was perfect!!

We dipped the chicken tenders in my favorite Zippy Pineapple Dip (recipe here - http://www.plainchicken.com/2014/12/zippy-pineapple-dip.html). We had some leftover chicken and chopped them up the next day in a salad for a quick and delicious lunch!

You can coat the chicken and freeze them for later. Just thaw them in the refrigerator for a few hours before baking.
