This Cajun Hash Brown Casserole is ridiculously good! It has tons of great cajun flavor and only takes a few minutes to make. Cheesy hash brown casserole loaded with chicken and smoked sausage. We ate this for dinner and fought over the leftovers for dinner. This easy casserole is a MUST for any upcoming Mardi Gras celebrations!

How to Make Cajun Hash Brown Casserole

These cheesy potatoes are super easy to make with only a few simple ingredients. In a large skillet, cook sliced smoked sausage over medium heat until brown. Drain excess grease. Set aside. In a large bowl, mix together cream of chicken soup, sour cream, heavy cream, and cajun seasoning. Stir in smoked sausage, cooked chicken, shredded cheddar cheese, and french fried onions. Stir in frozen hash browns. Spread the potato mixture into a baking dish that has been sprayed with nonstick cooking spray. Sprinkle the top of the casserole with french fried onions and shredded cheese. Bake in a preheated oven until bubbly. Garnish the baked dish with parsley.

Cajun Hash Brown Casserole – cheesy hash brown casserole loaded with chicken and smoked sausage. Seriously DELICIOUS! We ate this two days in a row! OMG! Chicken, smoked sausage, cajun seasoning, cheddar cheese, french fried onions, heavy cream, frozen shredded hash browns, cream of chicken soup, and sour cream. This is a family favorite! Makes a great freezer meal!

Ingredients:

  • 4 cups chopped cooked chicken
  • 1 (16-oz) package smoked sausage, sliced
  • 1 Tbsp olive or vegetable oil
  • 2 (10.5-oz) cans Unsalted Cream of Chicken Soup , recommend unsalted
  • 2 cups sour cream
  • 2 to 3 Tbsp Cajun/Creole Seasoning
  • 2 cups shredded cheddar cheese
  • 1 (6-oz) can french fried onions, divided
  • cup heavy cream, optional
  • 1 (32-oz) package frozen shredded hash browns

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
  • In a large skillet, cook smoked sausage and oil over medium-high heat for 5 to 8 minutes, until sausage is lightly browned.
  • In a large bowl, combine cooked chicken, smoked sausage, soup, sour cream, cajun seasoning, 1 ½ cups cheddar cheese, half of the fried onions, heavy cream, and hash browns. Pour into prepared pan.
  • Top the casserole with the remaining ½ cup of cheddar cheese and french fried onions.
  • Bake uncovered for 50 to 60 minutes.

Notes:

  • I updated this recipe and added french fried onions and heavy cream. You can omit both ingredients to make the original version.

  1. I’m making freezer meals for my upcoming surgery. Can you freeze this with the sour cream in it? Didn’t think that would work.
