This easy salad is our go-to side dish for summer cookouts and get togethers. Take this to your next potluck. It is sure to be a huge hit!

How to Make Frito Corn Salad

This dish is super easy to make with only a few simple ingredients. In a large bowl, whisk together mayonnaise, lime juice, and white vinegar. Add corn kernels, chopped red bell pepper, green pepper, red onion, and shredded cheddar cheese. Stir until well combined. Cover the bowl and refrigerate until ready to serve. Crush a bag of Chili Cheese Frito corn chips. Stir corn chips into the corn dip right before serving.

Ingredients:

  • 2 (15-oz) cans whole kernel corn, drained
  • 1 (11-oz) can Mexicorn (sweet corn and diced peppers), drained
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 red onion, diced
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 2 tsp lime juice
  • 1 Tbsp white vinegar
  • 1 (9.25-oz) bag Chili Cheese Fritos, crushed

Instructions:

  • In a large mixing bowl, combine all corn, peppers, onion, cheese, mayonnaise, lime juice and vinegar. Stir well.
  • Cover and refrigerate until ready to serve.
  • Stir in crushed Fritos right before serving.

  1. I’ve been making this recipe for years! My version I brown ground beef and add a little taco seasoning to the meat, let it cool and add it to the rest of the ingredients. It makes it more of a “meal”. Great for summer!!!
