I served this at a little dinner party the other night and it was gone in a flash! Everyone cleaned their plate and asked for the recipe! We served this peach cobbler with some vanilla ice cream and a sprig of mint from our little herb garden – perfection!
This peach cobbler is super easy to make. It starts with some canned peach pie filling. I also added some fresh peach slices to the mix. If you don’t have fresh peaches, frozen peach slices will also work great. Just make sure to thaw the peaches before adding them to the cobbler.
To make the cobbler, spread the pie filling in the bottom of a baking dish. Top with peach slices and cinnamon. Drizzle amaretto over the peaches. Sprinkle the cookie mix and almonds on top of the peaches. Pour melted butter over the cookie mix and bake.
Do NOT make the cookie dough. You are going to use the mix dry. If you don’t want to use alcohol in this recipe, you can use a teaspoon or two of almond extract instead.
We absolutely loved this cobbler – the cookie topping and almonds really put it over the top. I used some honey roasted almond slices from Trader Joe’s. They were perfect! I seriously can not wait to make this again!!
Amaretto Peach Cookie Cobbler
Ingredients:
- 2 (21-oz) cans peach pie filling
- 2 cups fresh or frozen peach slices, thawed
- ½ tsp cinnamon
- ½ cup amaretto
- 1 (17.5 oz) package sugar cookie mix
- 1 cup sliced almonds
- ¾ cup butter, melted
Instructions:
- Preheat oven to 350ºF.
- Spread pie filling in bottom on 9×13-inch pan. Top with peach slices. Sprinkle cinnamon over peaches.
- Drizzle amaretto over peaches.
- Top peaches with dry cookie mix and almonds. Pour melted butter evenly over top of cobbler.
- Bake 30 to 35 minutes, until bubbly and golden brown.

Ok I am a little confused, Is it a dry cookie mix and if yes do you prepare it without cooking and then add it to the cobbler. or do you just sprinkle it on Or is it a refrigerator cookie dough that you crumbled and added?
It is a package of dry sugar cookie mix that you sprinkle over the peach mixture. Do not prepare the dough.
