My slow cooker in in overdrive this time of year. I especially love making soup in my slow cooker!! This Slow Cooker 16 Bean Country Soup was crazy good! Smoked sausage, roasted turkey (or chicken), tomatoes, beef broth and lots of yummy seasonings. All you need is some cornbread and you have a super easy weeknight dinner!!
How to Make Slow Cooker 16 Bean Country Soup
This soup is ridiculously easy to make. Slice some smoked turkey sausage and chop some cooked turkey. Toss the meat into the crockpot. Add diced tomatoes, beef broth, chili powder, onion, oregano, salt, pepper, garlic, hot sauce, and a bag of 16 bean soup starter. Cover and cook on LOW all day.
Tips and Frequently Asked Questions
- I used a bag of 16 Bean Soup Starter from Target. It is with all the other dried beans. It had a little bit of everything in the bag – lima beans, black eyed peas, pinto beans, butter beans, black beans. Pretty much any bean you know is in this bag.
- I did not soak the beans before adding them to the crockpot.
- Do not use the seasoning packet that came with the soup mix. I only used the beans.
- I used smoked turkey sausage and some chopped up turkey in this soup. This would be GREAT for using up some of your leftover turkey you might have after Thursday’s holiday meal.
- If you don’t have any roasted turkey on hand, just toss in some cooked chicken or double up on the smoked sausage. This will taste great with whatever meats you choose to use!
- You can substitute chopped ham for the turkey. You can also add ham to the soup. YUM!

Slow Cooker 16 Bean Country Soup
Ingredients:
- 1 (16-oz) package 16 bean soup mix
- 1 (13-oz) package smoked turkey sausage, sliced into 1/4-inch disks
- 2 cups cooked roasted turkey chopped
- 1 (28-oz) can diced tomatoes, undrained
- 8 cups beef broth
- 2½ tsp chili powder
- 3 Tbsp dried minced onion flakes
- 1 tsp oregano
- ½ tsp salt
- 1/2 tsp pepper
- 3 garlic cloves minced
- 2 tsp hot sauce optional
Instructions:
- Combine all ingredients in slow cooker. Cover and cook on LOW 6 to 8 hours.

I pre-soaked the beans because I was cooking this on the stove. Added Perdue Rotisserie chicken pieces along with the turkey smoked sausage. Also added kale. This soup was absolutely delicious! Thank you Stephanie!
