Happy Christmas Eve! I hope everyone has been good little boys and girls this year and Santa brings you everything your heart desires. I already have my Norad Santa Tracker app pulled up ready to track Santa around the globe tonight! I am also ready to start watching A Christmas Story and eat our traditional Lasagna dinner tonight. There might also be a few holiday cocktails too! I hope you all have a wonderful holiday!!

This weeks menu has lots of ways to use up that leftover holiday turkey and ham. I think the leftovers are actually my favorite part of the holiday meal. What about you? I've included a couple of recipes that you can make while watching the college bowl games next week too. Merry Christmas!!!!

MONDAY




Cheddar-Pecan Green Bean Casserole - no cream of anything soup!! Fresh green beans and roasted red peppers tossed in a yummy buttermilk ranch sauce and topped with cheddar, pecans, and french fried onions. Not your grandmother's green bean casserole. This casserole is to-die-for! Can make the buttermilk ranch sauce and blanch green beans ahead of time for easy holiday meal prep!


White Cheddar & Squash Casserole Recipe - squash tossed in a white cheddar cheese sauce and baked - like macaroni and cheese without noodles. Even squash haters will love this easy casserole! Can make ahead for entertaining.


Butternut Squash Casserole - the crunchy topping makes the dish! SO delicious!! Butternut squash, eggs, sugar, butter, milk, coconut, ginger topped with cornflakes, brown sugar, pecans and butter. AMAZING! Perfect side dish for your holiday meals.


Slow Cooker Dinner Rolls - who knew you could use your slow cooker to bake rolls?!?! Great for the holidays when your oven is full.



Lemon Sour Cream Pound Cake - the most AMAZING pound cake I've ever eaten! So easy and delicious! Top the cake with a lemon glaze for more yummy lemon flavor. Serve the cake with whipped cream, mint and fresh berries. I took this to a party and everyone asked for the recipe!


Boiled Pecan Pie - no more runny pecan pie filing! This recipe is fail-proof! Boil the filling and then bake the pie. THE BEST I've ever eaten! Can make several days in advance.









Cheesy Zucchini Squares - DELICIOUS side dish or breakfast casserole! Perfect way to use up all that yummy summer squash! Zucchini, flour, baking powder, milk, eggs, green chiles and Monterey Jack cheese. We served this as a side dish with our grilled meats and had the leftovers for breakfast! SO YUMMY! Everyone raves about this simple side dish recipe!


SATURDAY
Puffy Club Sandwiches - these were a HUGE hit! Took them to a party and they flew off the plate! Can make ahead of time and freeze for later. Puff pastry topped with honey mustard, ham, turkey, roast beef, bacon and cheddar cheese. I'm going to double the recipe next time. We just love this easy hot sandwich recipe!!

Broccoli Pineapple Salad - so simple and SOOO good!! Seriously delicious!! Fresh broccoli, cheddar cheese, red onion, red grapes, fresh pineapple, pecans, bacon, mayonnaise, cider vinegar and sugar. Great for spring/summer cookouts, potlucks, camping and Easter side dish! We ate this for lunch and dinner the same day. Can make ahead and refrigerate for several days. Such a quick and easy fruit and vegetable side dish recipe!


SUNDAY


Sautéed Brussels Sprouts with Bacon - just like our favorite restaurant! Ready in about 10 minutes! Great weeknight side dish.


 Praline Crunch - highly addictive!! SOOOO good! Sweet and Salty in every bite! Crispix cereal, pecans, brown sugar, corn syrup, butter, vanilla, baking soda. Can make ahead of time and store in an air-tight container. Great for a party or homemade gift!
