3-Ingredient Chili

3-Ingredient Chili - ready in 15 minutes! SO easy and everyone loves it! Even picky kids gobble this up! Top chili with your favorite fixings or serve on top of french fries. Seriously delicious. A new family favorite!

This recipe is from my friend, Joy (https://joyleighphotography.com). This is her “go-to” chili recipe. She makes it all the time and her kids gobble it up! I decided to give it a try, and we both LOVED it! SO easy! It takes less than 30 minutes from start to finish. We ate this two days in a row and enjoyed it both times! It might have actually tasted better the next day after the flavors had time to meld together. All you need is a big hunk of cornbread and dinner is ready in a flash!

Make sure to use a spaghetti sauce that you really enjoy since it is the base for the chili. I used a packet of French's Chili-O seasoning. It is my favorite chili seasoning. We served the chili with some cooked rice and topped it with sour cream and Fritos. Our standard. Joy likes to serve the chili over fresh cooked French fries and top it with tons of yummy cheese. I'm totally doing that next time!

Ritz Carlton Bachelor Gulch {Beaver Creek, CO}

Ritz Carlton Bachelor Gulch {Beaver Creek, CO} - a skiers paradise. This hotel is AMAZING! We never wanted to leave.


We just got back from an amazing vacation in Beaver Creek, Colorado.
This was the first time we had visited the great state of Colorado, and it definitely won't be the last!
Chicken Legs had never seen so much snow! He also skied for the very first time on the trip.
We really had a great time.

We stayed at the Ritz Carlton Bachelor Gulch. 

We flew into Vail (Eagle County Airport).
The airport is TINY! Security was a breeze going home.
The hotel is about 20 minutes from the airport.

The hotel is about 5 minutes from the main part of Beaver Creek. 
There is a complementary shuttle that takes you down to Beaver Creek. It runs every 30 minutes.

Cheesy Sausage Soup

Cheesy Sausage Soup - ready in under 30 minutes! Sausage, chicken broth, diced tomatoes and green chiles, hash browns, corn, Velveeta and sour cream. Everyone LOVED this soup! Serve with some breadsticks for a quick and easy weeknight meal!

This Cheesy Sausage Soup is packed full of all of my favorite foods! Sausage, diced tomatoes and green chiles, chicken broth, corn, cheese, potatoes and sour cream. OMG! SO good! I made this for lunch and we both went back for seconds. Seriously delicious! This recipe makes a good bit of soup, so we ate this for lunch again the next day. Just as good!

I used a package of Tennessee Pride hot sausage in the soup. Feel free to use your favorite brand of breakfast sausage. If you aren't a fan of sausage, you could substitute ground beef in this recipe. I think it would be fine. I prefer sausage, so that is what I use in this recipe. We served the soup with some pretzel bread from Trader Joe's. It was a fantastic easy weeknight meal!

Taco Tater Tot Casserole

Taco Tater Tot Casserole - taco meat, diced tomatoes and green chiles, cheese, cheese soup, sour cream and tater tots - what's not to love? We ate this twice in one day! Can be made ahead of time and refrigerated or frozen for later. You can also divide it between two 8x8-inch foil pans and freeze one.  Taco night will never be the same!

This Taco Tater Tot Casserole was a nice change to our usual taco night. Taco meat, cheese, diced tomatoes and green chiles, sour cream tossed with tater tots. I mean, what's not to like! This casserole can be made ahead of time and frozen or refrigerated overnight. I like to split the casserole into two 8x8-inch foil pans. I bake one and freeze one for later.

We both LOVED this Taco Tater Tot Casserole. We ate it for dinner and leftover for lunch the next day. It was delicious both times! Feel free to top the casserole with your favorite taco toppings - lettuce, tomatoes, olives, guacamole, more sour cream. Get creative!

No-Rise Pizza Dough

No-Rise Pizza Dough - only 5 ingredients! Just mix together and it is ready to bake. Great weeknight recipe. SO much better than takeout!!! Flour, baking powder, salt, milk and butter. We make this at least once a week! Great recipe!

We LOVE homemade pizza, but sometimes it is a last minute decision to make pizza at home. This No-Rise Pizza Dough is the perfect weeknight pizza dough! Just mix it up and it is ready to bake! SO easy! The best part is that this dough tastes great too!! We've made this several times in the past few weeks, and I am already planning on making it again this week. I topped the dough with the No-Bake Pizza Sauce that I shared yesterday - SO DELICIOUS!!!! I am getting hungry just looking at the picture of the pizza. I might have to make this again tonight. This is obviously a new favorite!

We bake our pizza on a pizza steel. It makes THE BEST pizza. I bought it at Amazon. You can get it here - http://amzn.to/2jfUnPn. It is totally worth the price if you make pizza at home. We preheat the oven for about an hour to get the steel nice and hot. If you don't have an hour, just preheat the oven with the steel inside. It will be fine. I roll out the dough on a piece of parchment paper and bake the dough on the parchment paper on the steel. I use a cookie sheet to transfer the pizza to the steel in the oven. It works great! The pizza tastes better than any restaurant!

No-Cook Pizza Sauce

No-Cook Pizza Sauce - only 5 ingredients! You'll never buy the jarred stuff again! SO delicious! Just like the sauce on New York City pizza. Tomatoes, sugar, olive oil, garlic and parmesan cheese. Ready in minutes. We always have a jar in the fridge.

On our last trip to NYC, we took a Pizza Tour. We went around on a yellow school bus and ate pizza all around New York. It was THE BEST! One thing we noticed was that the sauce was mainly just fresh tomatoes. Not a tomato sauce based sauce like some pizzerias use. The sauce at all of the pizza places we went on the tour was so simple and incredibly delicious. I was looking through one of my cookbooks and found a recipe for a No-Cook Pizza Sauce. It sounded just like what we had in NYC. I had to give it a try.

O-M-G! This is my new "go-to" pizza sauce. Only 5 ingredients. Nothing crazy and it is ready in no time. I used a can of San Marzano tomatoes. I highly recommend San Marzano tomatoes. They are delicious. I find them at Fresh Market, Whole Foods, Sprouts and Publix where I live. If you can't find San Marzano tomatoes, buy a good name brand can of whole tomatoes. The tomatoes are the star in this recipe. Don't skimp!!

The sauce will keep for several days in the refrigerator. I used the sauce on a homemade pizza for dinner and then for lunch on some tortilla pizzas. YUM! This sauce is really delicious and is a new favorite.
