This Banana Pudding Eclair Cake deserves a spot at your Easter dinner table. This stuff is CRAZY good! The best part about the recipe? Um, it is no-bake. Boom! LOVE no-bake desserts!!! This Banana Pudding Eclair Cake can be made a day or two in advance and refrigerated until you are ready to serve it for dessert.

Now, we don't like a ton of bananas in our banana pudding. I know that sounds weird, but it is just how we are. LOL! I used about 7 medium bananas for this recipe, but feel free to load it up with tons of bananas if you are a nanner lover!

To bump up the banana flavor in the cake, I used one package of banana pudding. I typically use only vanilla pudding in my Banana Puddings, but I decided to get crazy to swap one box of vanilla pudding out for banana pudding. It was just the right amount of banana flavor!!

These Fried Okra Bites are a new favorite. Mini cornbread muffins with fresh okra mixed in the batter. OMG! SO good! They taste just like fried okra! I happen to LOVE fried okra, so these Fried Okra Bites were right up my alley!!

I loved the addition of the cheese to the okra muffins. I used cheddar cheese, but these would also be great with some pepper jack cheese. Really, any cheese you like would be good in these muffins. We served the Fried Okra Bites as a side dish, but they would also be great as an appetizer for a spring/summer party.

Just an FYI - I used White Lily Self-Rising Buttermilk White Cornmeal Mix in this recipe. If you can't find White Lily, you can use any brand of self-rising cornmeal mix. I like white cornmeal, but yellow is perfectly fine.

Stop what you are doing and make this Salsa Verde Chicken Tater Tot Casserole!! OMG! Crazy good!!! Chicken and tater tots tossed in a creamy green chile sauce and pepper jack cheese. All of my favorites in one pan! We ate this for lunch and leftover for dinner the same day.

The creamy green chile sauce is one of my favorites. It is so easy to make and it doesn't have any Cream of Anything soup. I always use full fat sour cream in the sauce. I haven't tried it with low-fat or fat-free sour cream. If you try either one of those varieties, let me know how it turns out.

This casserole has a little kick from the green chiles and pepper jack cheese. You can certainly use a different cheese if you are worried about the heat from the pepper jack cheese. Cheddar or Monterey Jack cheese would work great.

This recipe makes a TON. I usually make a batch on Sunday and we will eat these Oven Roasted Spring Vegetables with dinner the rest of the week. This side dish is so easy to make. Just chop the vegetables, toss in some balsamic and brown sugar and bake. Easy peasy!

Quiche is one of our favorite meals. We usually eat it for lunch or dinner. I'm always thinking of new flavor combinations to try out. I decided to try a quiche with our favorite combination of sausage and cream cheese. WOW!! SO good!! We ate this for lunch and dinner the same night.

This Sausage and Cream Cheese Quiche can be made ahead of time and frozen unbaked. I actually like to double the recipe and freeze one for later. We both really, really enjoyed this quiche. It tastes great and was super easy to make. We loved it so much that I am actually making it again this weekend. Add this to your menu! It would be great for Easter brunch next month or Mother's Day. This recipe has definitely gone into our dinner rotation. Enjoy!

Old School Chicken and Rice Casserole

Old School Chicken and Rice Casserole - seriously THE BEST!!! Everyone cleaned their plate and went back for seconds - even our picky eaters!!! Chicken, cream of chicken, cream of mushroom, cream of celery, onion powder, garlic powder, water, milk, instant rice and parmesan cheese. This has quickly become a family favorite! We make it at least once a month. SO good!!

This Old School Chicken and Rice Casserole is seriously delicious! We absolutely LOVED this casserole. We ate it for lunch and leftover for a couple of days afterwards. SO good! This casserole is super easy to make. It was ready to go in the oven in minutes. This makes a TON. Next time I might split it between two pans and freeze one for later.

I used a whole rotisserie chicken in this casserole. If you don't have a rotisserie chicken, you will need about 4 cups of cooked chicken for the casserole. This recipe uses three cans of Cream of Whatever soup. I always buy the 98% fat free or Healthy Choice to cut down on fat and sodium. Our favorite part of the casserole was all the yummy parmesan cheese on top! YUM! This was a huge hit in our house. Chicken Legs has already requested this again for dinner. I can't wait!

Spring is finally here! To celebrate, we fired up the grill this past weekend and had this amazing Strawberry Swirl Pound Cake for dessert. OMG! It was SO good! I love a good pound cake, and this Strawberry Swirl Pound Cake is one of the best. It is hard to beat cream cheese and strawberries!!

The strawberry swirl is made with a tub of strawberry glaze. I found the glaze in the produce section of the grocery store. If you can't find the strawberry glaze, I think some strawberry ice cream topping would work great. 

We served this pound cake with some fresh whipped cream. It would also be good with some homemade vanilla ice cream! YUM! This cake can be made a day or two in advance and stored in an airtight container. You can also freeze the cake.

One of my absolute favorite places to eat lunch is at a restaurant called Ashely Mac's in Birmingham. They have THE BEST chicken sandwich, and I am in LOVE with their Greek Pasta Salad. I'm not really a pasta salad person, but Ashely Mac's pasta salad is to-die-for!!! I could just eat the Greek Pasta Salad and be happy! Well, that probably isn't true. Ashley Mac's cupcakes are incredible! SO, maybe Greek Pasta Salad and cupcakes! LOL! I found the recipe for their chicken salad on the local paper's website and immediately whipped up a batch! It tasted just like the real thing! Woohoo!

This recipe makes a TON of Greek Pasta Salad. This would be great for a potluck.  I usually half the recipe when I make it. We ate this for several days with lunch and dinner. This will keep for 3 to 5 days in the refrigerator. I love the flavor of the dressing and all of the yummy crumbled feta! This goes great with sandwiches, grilled chicken, just about anything. Heck, we ate only pasta salad for dinner one night. We just can't get enough of this yummy side dish!!!

I had a really hard time picking just one recipe to share with you, but I finally decided on this Broccoli Pineapple Salad. We love broccoli and pineapple, so we were excited to try this! The hardest part of the recipe is chopping all the fruits and veggies. 

This recipe is super simple and crazy good!! I made this yesterday, and we ate the Broccoli Pineapple Salad with lunch and dinner. It is really, really good. We could have actually made this our meal! Chicken Legs said this needed to be on the menu at our favorite bakery cafes! It would be the most popular side dish on the menu! LOL!

This Broccoli Pineapple Salad makes enough for 6 to 8 people. It would be great for a spring/summer cookout, potluck, camping or Easter side dish. It will keep for several days in the fridge. I can already tell you that this will be a staple in our house this spring and summer. SO good!!!

After being in Europe for a few weeks, I've been immersing myself in American comfort food! There are few foods more American than cheeseburgers!!! This Bacon Cheeseburger Pasta is comfort food at its best!! Seriously delicious!! Bacon, hamburger meat, cheese and noodles. YUM!

This Bacon Cheeseburger Pasta can be made ahead of time and frozen for later. I like to split the casserole between two foil pans and freeze one for later. The only special ingredient in the casserole is a package of hamburger seasoning. I used some McCormick Grill Mates burger seasoning. I got it at Walmart. It gave the hamburger meat a nice flavor.

Give this casserole a try ASAP! I promise it will be a hit!

Spring is finally here! I am LOVING the weather. Well, everything except the pollen. YUCK! This time of year, I love to take my afternoon breaks outside on the screened in deck. It is so relaxing to sit outside and have a Canada Dry® Ginger Ale and little snack. I am a big fan of Canada Dry Ginger Ale. I just love the crisp, real ginger taste and refreshing bubbles. Cream cheese, peach preserves, green onions, country ham and dijon mustard. I just love the saltiness from the country ham. I found the country ham with all of the other diced ham at Walmart. It was in the center refrigerated section at my Walmart. If you don't like country ham, you could substitute regular cooked ham. This would even been good with some leftover Easter ham.

I served the Peaches and Cream Country Ham Dip with some crackers, but it would also be good with some celery. We are going to a party this weekend, and I have to bring an appetizer. I am totally bringing this dip. I'm sure it will be a hit!!!

Stop what you are doing and make this Macaroni Pie ASAP. This is hands-down THE BEST mac & cheese EVER. It is made with thin spaghetti instead of elbow macaroni and has tons and tons of ooey, gooey cheese. Chicken Legs could not stop raving about this dish! He has requested that we only serve this mac & cheese from now on. We served this as a side dish, but you could add some ham or chicken to the pasta and make this a main dish.

This makes a TON of cheesy pasta. You could easily half the recipe if you don't need to feed a crowd. I baked this in a 12-inch cast iron skillet. If you don't have a large cast iron skillet, you could use a 9x13-inch pan.

One of our favorite lunch spots in Birmingham is a place called Olexa's. It is an amazing bakery with a super cute cafe inside. All of the food is great! Especially the Chicken Salad. I finally got around to recreating the chicken salad at home. Let me tell you - OMG! This was SO good! It might be better than the original! Serve this on a croissant, on top of a salad, with crackers or on toasted bread.

The secret ingredients in this chicken salad are curry and smoked almonds.  Don't skip either in this recipe! I didn't think that I liked curry, but I loved it in this chicken salad. I used half of a rotisserie chicken in this recipe. Rotisserie chicken is my go-to for cooked chicken in recipes. It has great flavor and is super convenient.

This chicken salad can be made ahead of time and stored in the refrigerator for up to 5 days.

Today I am sharing all of the yummy food that we ate while we were in the Beaver Creek/Vail area.
We ate several meals at the hotel, but we did venture out a bit to some of the area restaurants.
We ate THE BEST steak EVER on this trip.
We also ate some pretty amazing pizza, burgers and sandwiches!

Only 6 ingredients - Chicken, Italian dressing, artichokes, mayonnaise, garlic, parmesan cheese. Can assemble chicken earlier in the day and bake when ready. Everyone LOVED this!!!

This Artichoke Chicken has quickly become a favorite in our house. It is incredibly delicious! This only takes a few minutes to make and it tastes fantastic. We've made this several time and even served it at a little dinner party. I love making this for a dinner party because you can assemble the chicken earlier in the day and pop it in the oven about 20 minutes before you are ready to eat. SO easy!!

To give the chicken extra flavor, I marinated it in some bottled Italian dressing. I really think this made the dish. Nobody wants to eat bland chicken! The cheesy artichoke mixture on top is basically my favorite artichoke dip. OMG! I mean, how could anyone NOT like this?!?! Serve this with some asparagus, pasta or rice for a restaurant quality meal at home!

This Guinness Bread is the BEST beer bread I've ever eaten. This is great for breakfast or an afternoon snack. We especially loved the bread slathered with some honey butter!! We love beer bread in our house. It is super easy to make; It only requires a few simple ingredients and is ready to eat in about an hour. LOVE easy homemade bread!!

This Guinness Bread is a little different from my usual beer bread recipe. I added some molasses to give it a pretty "Guinness" color. The molasses added tons of great flavor in addition to the nice color.   I used canned Guinness beer. It has the nitro cartridge in it and tastes like the beer right out of the tap. You can definitely use the bottled Guinness if that is what you prefer. Chicken Legs is a Guinness purists, so it is only cans in our house.

What happens when you put your favorite beer in your hamburger? It becomes your new favorite burger! Chicken Legs favorite beer is Guinness. Since St. Patrick's Day is just around the corner, I have been brainstorming recipe ideas. I decided to combine Chicken Legs favorite beer with one of his favorite foods (burgers). The result was one AMAZING burger! I don't really like beer, and I absolutely loved these burgers!!

This recipe makes 6 large burgers. You can certainly make smaller burgers, but we like nice big burgers. The burgers can be made ahead of time and frozen for later. We actually have some in our freezer now. I love pulling out a few burgers for a quick lunch or dinner.

We grilled the burgers, but you can cook them in a skillet too. Either way will make a super tasty burger!

Slutty Brownies are all the rage on the internet. Have you had them? I've seen them online, but I have never had one. I decided to whip up a batch for St. Patrick's Day. I used mint Oreos and mint brownie batter in honor of the holiday. OMG! Where have these been my whole life?! Seriously delicious!!!

The makeup of a Slutty Brownie is a layers of cookie dough, Oreos and brownies. They originated with my friend, Amanda (kevinandamanda.com). She didn't give them their famous name; it just came about via the internet one day. I am not a big sweets person, but I could not stop eating these Mint Chocolate Slutty Brownies! They were incredible! They are the perfect treat for St. Patrick's Day!! They will keep for several days in an airtight container. Whip up a batch today. I promise you will not be disappointed!
