I buy pork tenderloin at Costco, so we always have at least one pork tenderloin in the freezer ready to go!

This honestly only takes about 5 minutes to make and is ready to eat in under 30 minutes. Just wrap the tenderloin in back, rub it in the seasoning blend and pop it in the oven. Feel free to put the cooked pork tenderloin under the broiler for a minute or two to crisp up the bacon.

Sweet and Spicy Bacon Wrapped Pork Tenderloin

prep time: 5 MINScook time: 27 MINStotal time: 32 mins

ingredients:


  • 1/3 cup brown sugar
  • 1 tbsp chili powder
  • 1 (1.5-lb) pork tenderloin, silverskin removed
  • 5 to 6 slices bacon, uncooked

instructions:


  1. Preheat oven to 425ºF. Line a rimmed baking sheet with foil and top with cooking rack.
  2. In a shallow dish, combine brown sugar and chili powder.
  3. Wrap bacon around pork tenderloin, securing with toothpicks if necessary. 
  4. Coat bacon wrapped pork tenderloin with the brown sugar and chili powder mixture. Place on baking sheet.
  5. Bake for 25 minutes. Place under broiler for 2 to 3 minutes to crips up bacon, if desired.

  3. Made this tonight! I think my pork tenderloin must've been a little thicker; it was a little underdone at one end. Nothing a couple of minutes in the microwave couldn't fix, though. I had it with cauliflower risotto (Alexia brand frozen, not something from scratch).
