Pin This RecipeI can just eat this fried okra like popcorn. It is my all-time favorite vegetable! I can eat an obscene amount of it in a short amount of time. I just love it. This recipe couldn’t be any simpler. It only has two ingredients! Fresh okra and self-rising buttermilk cornmeal mix. Slice, toss, and fry. YUM!
For the self-rising cornmeal, I use Martha White brand cornmeal mix. For the okra, I like to use small okra pods. I like how crunchy the smaller slices get when they are fried. When slicing the okra, I discard the hard stems and the tips of the okra. I don’t like to eat those parts. If you like them, keep them in the mix. If you can’t find fresh okra, feel free to use frozen okra slices. Just make sure to thaw them before cooking.
As I said, this easy 2-Ingredient Fried Okra is an all-time favorite at our house. I could eat this whole recipe all by myself! It is absolutely delicious! Give this a try the next time you make fried okra. I hope you enjoy it as much as I do!

2-Ingredient Fried Okra
Ingredients:
- 1 lb okra
- 1 cup self-rising buttermilk cornmeal mix
- vegetable oil
Instructions:
- Rinse okra and slice into 1/4-inch slices. Discard stems and tips. Rinse sliced okra in a colander. Shake off excess water. Transfer okra slices to a bowl. Pour cornmeal mix over okra. Toss to cover all okra slices.
- Pour oil to a depth of 2 inches in a Dutch oven or large skillet. Heat oil to 375°F. Fry okra in batches until golden brown, about 5-8 minutes.

Years ago when I had a garden, I have added a squash and green tomatoes to the mix. Yummy!This made my hungry for okra!
I agree with discarding of the tips and stems. My grandma never used them. My daughter and I have learned to check each piece when getting them at restaurants. Apparently the people who prepare them for the customer have never eaten them or they would realize that the stem especially is not edible.

that looks so good! I just "discovered" fried okra a few years ago, and now I eat it every chance I get. I'm going to try this the next time I can find some small okra. thanks!
My mom used to make fried okra like that also. I miss her cooking. I lost her in Dec 2003.
The coating on your okra looks perfect and we have to be tried here.
I like to put the cornmeal in a grocery bag..paper is better but I use the plastic ones also (double bag) then add okra and shake shake what ya mama gave ya!!! :))
I love it, too, but try putting in a couple of diced potatoes before adding the cornmeal mix! You'll love it even more!!
