“Greek Yogurt” week continues with CHEESECAKE!! OMG! I absolutely loved this cheesecake. Don’t tell anyone that it is low-fat because they would NEVER guess it. This cheesecake has a nice creamy texture. It isn’t overly rich, so you can go ahead and eat a big piece!
Snickers Cheesecake
1 ½ cups graham cracker crumbs
5 Tbsp sugar
⅓ cup melted butter
Combine and press against sides and bottom of springform pan. (I use a measuring cup to do this – works great!)
Filling
2 (8oz) ⅓ less fat cream cheese, softened
1 ½ cups Oikos Vanilla Greek Yogurt
3 eggs
¾ cup white sugar
2 tsp Pure Vanilla Extract
1 bag miniature Snickers bars, chopped
Preheat oven to 325.
Use a mixer to blend together the cream cheese and Greek yogurt; once fully incorporated, mix in one egg at a time; add the sugar and vanilla and mix until everything is just incorporated. Fold in the chopped candy and pour the mixture into the crust. Bake for an hour. Remove from oven and allow the cheesecake to cool completely to room temperature and then refrigerate it for 2 hours. Once cool, drizzle caramel and chocolate over cheesecake and top with chopped peanuts. Enjoy!
