Easy Oven Roasted Potatoes
These potatoes are super easy to make with only a few simple ingredients. Rinse and scrub potatoes. Using a knife or mandoline slicer, slice potatoes into thin slices. Place potato slices in a ziplock bag or large bowl. Drizzle potatoes with olive oil. Add Italian seasoning, salt, and black pepper to the oil mixture. Toss the potatoes to coat in the oil and spices.
Line a large rimmed baking sheet with aluminum foil or parchment paper and spray with cooking spray. Place potatoes in a single layer on the baking pan. Bake for 20 minutes, or until lightly brown. Sprinkle potatoes with grated parmesan cheese. Bake for an additional 5 minutes.
- I used russet potatoes. Russet potatoes are also referred to as baking potatoes.
- You can use any type of potatoes that you prefer – Yukon gold potatoes or red potatoes are both good.
- Feel free to mix up the herbs on the potatoes. Garlic powder, paprika, taco seasoning, cumin, anything goes.
- Cooking time may vary depending on how thick your potato slices are.
- Store leftovers in an airtight container in the refrigerator.
- Reheat in the oven or air fryer.

how long would these need to bake at 350?
Do they need to be flipped?
Do they need to be flipped?
Can also do these with a pizza stone, can be done in the microwave with the stone.

Is it Italian seasoning or Italian dressing seasoning(dry mix)
Fast, easy and lots of good flavor. Enjoyed and will make again.
likes2eat – I got some white truffle oil for Christmas – I'll have to try it with these potatoes
Making these tonight for my son and I, as side with steak. We decided to add a bit of white truffle oil to the mix, and wow! Thanks for sharing
I am making these tonight with a Standing Rib Roast that we have roasting on the Big Green Egg!
Thanks for sharing this recipe.
Did this as an Hor d'euvres and it was a huge hit. Thanks for sharing!
Diane – I used the parmesan cheese from the green can
Is the Parmasan cheese fresh and grated, or Kraft in the can?
Great recipe! I made this for dinner along with some baked chicken breasts, so I ended up baking the potatoes for 30 minutes on 425. Next time I make this recipe, I'll grease the pan with a little more olive oil; some of the potatoes stuck to the pan.
450 is much too hot for this if slice "really thin" as stated. They maxed out at about 10-12 minutes. Delicious otherwise.
Yum! I never thought of Italian seasoning. I'll have to try this!
I make potatoes like this fairly often. Cabela's makes a Beer & Garlic flavoring mix that is amazing on these!
Can't wait to try!!
Can't wait to try!!

making these tonight minus the italian seasoning
I saw these on pinterest and just had to look, these sound yummy and very similar to a recipe I grew up with. My version also uses sliced potatoes, but after that they get a light cross-hatch pattern with a pairing knife (not sure why, mom never explained), then are brushed with melted butter and sprinkled with seasoning salt before baking. So yummy, but will have to try the Italian seasoning next time. Thank you for sharing.
You don't love potatoes? Oh, I DO! I'll be giving these a try soon!
Happy Friday!

I love love love potatoes! These sound fabulous to me!
Your oven roasted potatoes looks really good. Slicing them thin really does help to make the potatoes crispy.
I do a roasted potato with similar ingredients but do my potatoes just quartered. I like the idea of doing them thin sliced like this, almost like thick potato chips. I think the kids would love this. You rock Steph!
These babies look delicious
Yum! I'm making these tonight.
Personally I love potatoes, I bet I would love these!
