Sister Schubert Breakfast Casserole Recipe

I don’t know if you heard the news. Sister Schubert discontinued their beloved sausage rolls. I discovered this over Thanksgiving weekend when I was getting ready to make one of our favorite breakfast casseroles. I had to pivot and rework the recipe with the new sausage pinwheels. Well, let me tell you. It turned out great! You can’t beat the deliciousness of Sister Schubert rolls!! 

This Sausage Pinwheel Breakfast Casserole has quickly become a favorite at our house. Sausage pinwheels, crumbled sausage, and cheese, baked in creamy eggs. YUM! There isn’t a ton of sausage in the new pinwheels, so I added extra sausage to the casserole to give it more substance. SO yummy! This casserole is a new holiday tradition at our house!

How to Make Sausage Pinwheel Breakfast Casserole

This casserole is very easy to make with only a few simple ingredients. In a medium skillet, saute breakfast sausage over until no longer pink. Drain grease in a colander. Place a package of Sister Schubert’s Sausage Pinwheels on a cutting board. Cut eat roll into three or four small pieces. Place bread pieces in a baking dish. Top the rolls with cooked sausage crumbles and shredded cheese. In a large mixing bowl, whisk together eggs, whole milk, dijon mustard, salt, and cayenne pepper. Pour egg mixture over the rolls. Bake until the center of casserole puffs and sets up. Garnish top of casserole with parsley.

  • Feel free to add any vegetables you enjoy to the casserole. Onion, bell pepper or fresh spinach would all be delicious.
  • I use colby jack cheese. You can use any cheese that you prefer. Parmesan cheese, yellow cheddar cheese, gouda, mozzarella, or gruyere would all be delicious.
  • Can substitute turkey sausage to reduce the calories in the dish.
  • Sometimes I add a little hot sauce to the egg mixture to give the casserole a kick.
  • Can Sausage Pinwheel Breakfast Casserole be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it overnight before baking.
  • Can Sister Schubert Breakfast Casserole be frozen? Yes! Assemble the casserole and cover the pan with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.

Sister Schubert Sausage Pinwheels

This recipe uses a package of the new Sister Schubert Sausage Pinwheels. This product replaced the Sausage Rolls that were discontinued in 2021. There isn’t a lot of sausage in the pinwheels, so we added extra cooked breakfast sausage to the casserole.

Look for the sausage pinwheels in the freezer section at the grocery store.

We love this easy breakfast casserole! It is our new Christmas breakfast tradition. We like to serve this with some grits or potatoes and cinnamon rolls. This casserole is equally delicious at lunch or dinner with a salad. Add this to your menu ASAP! You won’t be disappointed!

Sausage Pinwheel Breakfast Casserole – made with a package of the new Sister Schubert's Sausage Pinwheels! This has quickly become a favorite at our house. Ingredients:

  • 1 (18-oz) package frozen Sister Schubert sausage pinwheels, thawed
  • 3/4 lb breakfast sausage
  • 8 large large eggs
  • cups milk
  • 2 tsp Dijon mustard
  • ¾ tsp salt
  • ¼ tsp ground red pepper
  • 2 cups grated Colby Jack cheese

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
  • In a skillet, cook breakfast sausage until no longer pink. Drain fat.
  • Break apart sausage rolls; cut each roll into 3 or 4 pieces. Place chopped rolls in the prepared pan.
  • Sprinkle cooked sausage and shredded cheese over rolls.
  • Whisk together eggs, milk, dijon mustard, salt, and cayenne pepper. Pour egg mixture over rolls.
  • Bake, uncovered, for 45 to 55 minutes. Cover the casserole with foil during the last 10 minutes if starting to get too brown.

  2. The rolls are just pulled apart so there are individual sausage rolls. You are just taking the pan of rolls and spreading them out in a 9×13 pan
