Creamy Chicken & Noodles

I’ve been following Jill’s Southern Living Challenge blog.   She challenged herself to try 100 Southern Living recipes in 2010.  She made tons of recipes that I’ve had bookmarked for years.  This recipe has been on my “to make” list for a really long time.    I finally decided that I must make this recipe after Jill raved about it.  I can’t believe that it took me so long to make this!  It was fantastic.  It even tasted great reheated the next day.  This is a recipe that I will be making over and over.  It doesn’t photograph well, but, believe me, it is worth making!

Creamy Chicken & Noodles

(Printable Recipe)

1 (0.6-oz.) envelope Italian dressing mix
1 (8-oz.) package wide egg noodles
2 tablespoons butter, softened
3 cups chopped cooked chicken
1 cup whipping cream or evaporated milk
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Cook noodles according to package directions; drain well, and return noodles to pan.

Stir in 2 Tbsp. butter, and toss to coat. Stir in chopped chicken, next 3 ingredients, and dressing mix. Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated. Serve immediately.

  1. Other posts are 10 years old but, nothing lost I feel.
    While I’m making “my own version” of chicken and noodles, I wish I had seen this before I was nearly completed.
    Old country boy here (age 69) and my “go to” for any kind of meat and noodles has well cooked chopped onion, salt, pepper, chicken (or beef for red meat) bouillon cubes (lots, LOL) a can of mushrooms, one large can of cream of mushroom soup (sometimes a small can added) then, the meat of course. The final “secret” ingredient is sour cream…..AT THE VERY LAST MINUTE, then stir.
    I tend to pepper what’s on my plate heavily (old German family) and eat with “Grands” (sorry, I’m lazy) biscuits OR poured over mashed potatoes. (LOTS of starch LOL!) Works with even ground beef, especially when on mashed potatoes. BEST is with ground venison though (IMO). Lots of recipes around similar to what I use and I’m always looking for a “twist”. THIS ONE, even though very different, sounds like a “GOTTA MAKE THIS” to this ol geezer. God Bless.
