This Mojo Chicken is on repeat at our house. This recipe is from Los Barrios Restaurant in San Antonio, TX. They call this recipe Make Me Crazy Grill Marinade. I can see why – I’m sure everyone goes crazy over it! We absolutely LOVE the smoky citrus flavors in the marinade. The chicken is extremely flavorful and tender. We always make extra chicken so we can eat it for lunch during the week. It is great in tacos, sandwich wraps, and on top of salads.
How to Grill Chicken
This marinade is super easy to make with only a few simple ingredients – lemon juice, lime juice, orange juice, cumin, garlic, oregano, and salsa. Whisk everything together and pour it over some chicken. Let the chicken hang out in the refrigerator for a couple of hours and then grill.
Don’t have a grill? No problem! You can cook this chicken inside. Pan sear the chicken for 3 or 4 minutes per side. Place the chicken on a rimmed baking sheet. Bake chicken at 400ºF for 10 minutes, until it reaches an internal temperature of 165ºF.
We used the marinade on chicken, but it is a very versatile marinade. You could also try it on pork, fish, or shrimp. I have plans to use it on a pork roast very soon. I am thinking pork tacos and quesadillas would be good.
What to Serve with Mojo Chicken
This easy Mexican grilled chicken has quickly become a favorite at our house. We love this with black beans and rice and some salsa. We’ve also added some onions and peppers to the grill and eaten the chicken as fajitas. YUM!

Mojo Chicken Marinade
Ingredients:
- ⅓ cup lime juice
- ⅓ cup lemon juice
- ⅓ cup orange juice
- 1½ Tbsp minced garlic
- 1 tsp dried oregano
- ¾ tsp ground cumin
- 1 bay leaf
- salt and pepper, to taste
- ½ cup salsa
- 2 Tbsp olive oil
- 4 to 6 chicken breasts
Instructions:
- Whisk together lemon juice, lime juice, orange juice, garlic, oregano, cumin, bay leaf, salsa, olive oil, salt, and pepper.
- Place chicken in a Ziplock bag and pour marinade over the meat. Place the bag in the refrigerator, and marinate for 2 to 4 hours.
- Remove chicken from marinade and grill until chicken reaches an internal temperature of 165ºF.
Notes:
- Can use any cut of chicken – breasts, thighs, tenders, or legs.
- Can use boneless or bone-in chicken.
- Can use the marinade on pork, steak, fish, or shrimp.
- Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa.
