This is another easy weeknight meal courtesy my favorite cookbook, Southern Living Homestyle Cooking. This recipe been on my list to make for years.  I finally got around to making this last week.  I wish I had made them sooner – they were great!

I used some rotisserie chicken and this came together in no time.  We both loved these little chicken bundles – especially the croutons on top.  They reminded us of my Chicken Roll Ups, but without the sauce on top.  These are going into our regular weeknight dinner rotation.

Chicken Crescent Squares

prep time: 5 MINScook time: 20 MINStotal time: 25 mins
 

ingredients:

 

  • 1 (3-oz) package cream cheese, softened
  • 3 Tbsp butter, melted and divided
  • 2 cup chopped cooked chicken
  • 2 Tbsp milk
  • ⅛ tsp pepper
  • 1 can refrigerated crescent rolls
  • ¾ cup seasoned croutons, crushed

instructions:

 

  1. Preheat oven to 350ºF.
  2. Combine cream cheese and 2 Tbsp butter; stir in chicken and next 3 ingredients.  Set aside.
  3. Unroll crescent dough, separating into 4 rectangles; press perforations to seal.  Spoon ¼ of chicken mixture into center of each rectangle; bring corners of each rectangle together over chicken mixture, and twist gently to seal.
  4. Brush packets with remaining 1 tablespoon of melted butter; dredge in crushed croutons and place on an ungreased baking sheet.  Bake uncovered for 20-25 minutes or until golden brown.

  1. I made these last night, but some how totally missed the milk part, so they there a bit dry (since I forgot the milk!)…

    I added about half a packet of ranch dressing seasoning… They were delicious, next time will not leave out the milk!

    My boyfriend didn't even pull out the hot sauce, which he does for EVERYTHING!

  2. So I made these the other night…and had some trouble. The mixture was so runny that my packets wouldn't seal and I had stuff running out of the seams everywhere. I ended up opening a new package of crescent rolls (thank goodness I had another tube!) and tried filling the packets again. I had to use a paper towel to sop up the extra moisture so I didn't end up with a soggy mess again. In the end, it was still a bit runny but I managed to still produce dinner! The flavor was good. I guess it's possible I measured something like the milk wrong but can I try just leaving the milk? I have a similar recipe with cream cheese and chicken filling that doesn't use any milk or butter on the inside and they work out perfectly. Any suggestions?

I make some chicken foldovers with cream cheese and lemon pepper filling that my husband loves and I'm excited to try your version, especially with the croutons! Yum!

  4. Andrea – yes, I pinched the sides together so the roll was completely sealed around the chicken. It doesn't matter which side you coat with croutons. I think I did the side I twisted, but it varies.

  5. When you twist the corners to seal, do you pinch the edges shut, too? Then is that the side you dredge in croutons or do the seams go down on the baking sheet? Meaning, is the flat side the one that has croutons on it or the side where the corners come together?

I usually NEVER change up a recipe because I’m not that good at thinking up tasty things, but while I was shopping for ingredients for this recipe, I found Cooking creme cheese, and it was flavored as Italian cheese & herb! I had to get it and try it in this recipe, also added 1/2 cup sautéed onions to the chicken.
    Oh. My. Stars!!!!!!!

  8. I made these tonight for my husband and picky 7 year old. Both practically licked the plate. My 7 year old ate TWO! Next time, though, I'm going to double the recipe because one each wasn't quite enough.

  10. Jodie – it is both. You add only 2 of the 3 Tbsp of butter and then the next 3 ingredients (chicken, milk & pepper). You use the 3rd Tbsp of butter to brush the crescents before baking.

  11. The ingredients list says 2 Tbsp milk but the directions say 2 Tbsp butter…. which is it? Planning on making these tonight 🙂

  12. I make a variation of these using canned chicken and cream cheese, parsley, dried onion and spices to taste. My boyfriend LOVES them and requests them at least once a week. They're so easy to double for leftovers for the next day!!

    My recipe was almost the same except I added green onions in with the chicken and cream cheese! Yum!
