This Sausage, Egg & Biscuit Breakfast Casserole is my new go-to breakfast casserole! It is effortless to make and tastes great! Frozen buttermilk biscuits, sausage, eggs, milk, and heavy cream. I mean, how could this not be good? Comfort food at its best! Even though this is a breakfast casserole, it is great for lunch and dinner as well. We love breakfast for dinner at our house. Run, don’t walk, to get the ingredients to make this casserole!
How to Make Sausage, Egg & Biscuit Breakfast Casserole
This casserole is very easy to make. Start with partially thawing some frozen buttermilk biscuits. Slice the biscuits in half making two circles. Place biscuit bottoms in a baking dish. Sprinkle the biscuits with some cooked sausage and shredded cheese. Place remaining biscuits on top of the cheese. Sprinkle with more sausage and cheese. Whisk together milk, heavy whipping cream, salt and pepper. Pour egg mixture over biscuits. Bake until the eggs are set.
- I used Pillsbury Grands! Southern Style Frozen Biscuits.
- The biscuits only need to be thawed enough to be able to slice them in half. You can pop them in the microwave for a few seconds if you are short on time.
- Can substitute turkey sausage for pork sausage in this recipe.
- Can Sausage, Egg & Biscuit Breakfast Casserole be made in advance? Yes! Assemble the casserole. Cover and refrigerate overnight. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.
- Cover the casserole with foil if it starts to get too brown.
- Can Sausage, Egg & Biscuit Breakfast Casserole be frozen? Yes! Assemble the casserole as directed. Cover the dish with plastic wrap and aluminum foil. Place the dish in the freezer and freeze. When ready to bake, thaw completely and bake as directed.
- You can also freeze the baked casserole. Bake the casserole and cool completely. Cover the dish with plastic wrap and aluminum foil. Place the dish in the freezer and freeze. When ready to serve, thaw completely and reheat in the microwave or covered in the oven at 350ºF until warm.
What to Serve with Breakfast Casserole
We topped the casserole with some salsa but some sausage gravy would be good too. Heck, throw some syrup on there if you like sweet & savory. YUM! This is a great casserole for overnight guests and holiday mornings.

Sausage, Egg & Biscuit Breakfast Casserole
Equipment:
Ingredients:
- 1 lb breakfast sausage
- 8 frozen buttermilk biscuits slightly thawed, halved
- 2 cups shredded cheddar cheese
- 7 large eggs
- 1 cup milk
- 1 cup heavy cream
- 1 tsp salt, or to taste
- 1 tsp pepper, or to taste
Instructions:
- Preheat oven to 375°F. Lightly spray a 7×11-inch dish with cooking spray.
- Brown sausage in pan, breaking into chunks. Drain fat.
- Slice each biscuit in half with a serrated knife. Place biscuit bottoms in the baking dish. Sprinkle half of the cooked sausage over the biscuits and top with half of the cheese. Place remaining biscuits on top of the cheese and cover with remaining sausage and cheese.
- Whisk together eggs, milk, cream, salt, and pepper in a large measuring cup. Pour egg mixture over biscuits. (Can cover and refrigerate at this point)
- Bake for 50 to 60 minutes, until eggs are set. Cover the casserole dish with aluminum foil if it starts to get too brown. Let casserole stand 10 minutes before serving.

have you tried switching the sausage with either ham or bacon?
I haven’t, but I would assume any meat would work fine.
Can you use the refrigerated biscuits from the can? If so, how should you adjust the cooking time/temp? I usually have those on hand. Excited to try this next time the in-laws are in town. Thanks!
I’ve never tried this with refrigerated biscuits. The cooking time and texture aren’t the same. As always, please use your best judgment regarding substitutions and modifications.
Can you use refrigerated biscuits? My rural grocery store doesn’t carry frozen biscuits.
I’ve only made this with frozen biscuits, so I can not say how refrigerated biscuits would work.
I was so excited to try out this recipe. But when I made it, using slightly thawed biscuits, following the recipe to the tee, The dough was done on the edges and not in the middle. I was very disappointed. It's in the oven now, again, so we're just hoping the top doesn't burn before the middle is done.
We do the same thing except it uses plain bread. Yours looks much better and I will try this the next time we make it (probably Christmas).
