Saucy Mama – Honey Chipotle Lime Chicken & Herb Crusted Pork

I am one of 50 bloggers selected by Saucy Mama to compete in the “Skinny Mama – Cooking with Mustard” Recipe Contest.   I received a box of six Saucy Mama mustards last week. They sent Smoky Garlic, Champagne Honey, Dijon, Lemon Tarragon, Chipotle and yellow mustard. 
 I was really interested in the Smoky Garlic and Chipotle mustards.  I decided to make one recipe with each of those mustards – Honey Chipotle Lime Chicken Tenders and Herb Crusted Pork Tenderloin. Both recipes were great. They were SO flavorful and low cal!  Can’t beat that!!  

Honey Chipotle Lime Chicken Tenders

2 lb chicken tenders
½ cup honey
½ cup Saucy Mama Chipotle Mustard
3 Tbsp lemon juice
½ tsp paprika
¼ tsp chipotle powder
½ tsp salt

Mix together honey, mustard, lemon juice, paprika, chipotle powder, and salt. Whisk until smooth. Pour over chicken tenders and marinate in the refrigerator for 1-3 hours. Remove chicken from marinade and grill 10-12 minutes, until juices run clear.

Herb Crusted Pork Tenderloin

1 (1-pound) pork tenderloin, trimmed
3 tsp parsley
3 Tbsp Parmesan cheese, grated
¼ cup panko bread crumbs
2 tablespoons Saucy Mama Smoky Garlic Mustard
½ tsp garlic powder
2 tsp Italian Seasoning

Preheat oven to 450°.

Combine the breadcrumbs, parsley, and cheese in a shallow dish. Set aside.

Combine Saucy Mama Smoky Garlic Mustard, Italian seasoning and garlic in a small bowl. Rub pork with mustard mixture, and dredge in breadcrumb mixture. Place the pork on a jelly-roll pan lightly sprayed with cooking spray.

Bake for 25 minutes or until pork temperature is 160 degrees. Let stand for 5 minutes. Cut crosswise into 1/4-inch-thick slices.

  1. Would a different mustard like dijon mustard taste okay? I'm not a mustard fan, but this looks good.

  3. Those recipes sound ridiculously good. Can you find these mustards in a regular ole' grocery store or do you have to order online?
