I’ve had this recipe pinned on my Food board on Pinterest for a while.  I finally got around to making it last weekend, and it was surprisingly good!  This might be the easiest dinner I’ve ever made.  Actually, this was so easy to make that I let Chicken Legs make it!  He was concerned that it was too thick, but I was more  concerned that it would be bland.  Well, it turned out that neither of us had anything to worry about.  The mixture magically transformed into a wonderfully delicious bowl of soup.  We both loved it.  We topped the soup with some bacon bits, cheese and sour cream.  I would have added green onions, but I didn’t have any.  Next time!

ingredients:

  • 1 (32-oz) bag frozen shredded hash browns
  • 3 (14.5-oz) cans chicken broth
  • 1 (10.75-oz) can cream of chicken soup (I used 98% fat free)
  • 2 Tbsp minced onion flakes
  • 1 tsp pepper
  • 1 tsp salt
  • 1 (8-oz) package cream cheese (I used light)

instructions:

  1. In a crockpot, combine everything except for the cream cheese. Cook for 8-10 hours on low. 
  2. About 15 minutes before serving, add cream cheese. Stir until melted and thoroughly combined. Serve with cheese, sour cream, bacon bits, green onions.

  1. I’ve been making this soup for years and we love it. Recently it’s been really watery and doesn’t get thick like it used to. Anyone else have this problem? I’ve been using cubed hash browns instead of shredded. Thoughts?

    1. I’m not sure why. What did you change? I always use shredded hash browns and cook it until it is thick.

  2. I want to make this for a ladies luncheon. How many will it serve. I have made this for my husband and I and we ate it for dinner and for breakfast the next day. It was that good. Now how can I make this for say 10 servings. Just in case ome of the ladies wants a second bowl. Thank you, I love your blog.

  4. I make this with cream of potato instead of cream of chicken. I don't like bits of chicken in my potato soup lol. I also use the cubed hash browns versus shredded.

    1. Ah! I just put mine on to cook. Wish I'd read this first. I totally agree about the chicken. I did use cubed hash browns, but only because the grocery was out of shredded. Glad to hear it works ok!

  6. This is the easiest and most tasty potato soup recipe I have ever found! My kids LOVE it. I like to put it on at night, wake up and stir the cream cheese in and then keep on warm for them to have it the rest of the day. SO GOOD!
