Lasagna Biscuit Cups
serves 6

- 1/2 lb Italian Sausage
- 1/2 jar spaghetti sauce
- 3/4 cup cottage cheese
- 1/4 tsp garlic powder
- 1/4 tsp basil
- 1 egg white
- 1 cup shredded mozzarella cheese
- 1 can regular flaky biscuits
Preheat oven to 375.
Cook meat slowly in skillet. Drain and put back in skillet. Add spaghetti sauce and stir. Set aside.
In a small bowl mix together cottage cheese, garlic, basil and egg white.
Separate dough into 10 biscuits; place each biscuit in a regular-size muffin cups. Firmly press dough in bottom and up side of each cup.
Layer 1 tablespoon of the meat sauce in the bottom of each biscuit cup. Top with 1 tablespoon of the cottage cheese mixture. Top with some mozzarella cheese. Repeat layers.
Bake 17 to 20 minutes or until biscuits are golden brown and cheese is melted. Serve with leftover meat sauce.


I'm always so impressed with the creative things you make with various pre-made doughs - these sound super good.

ReplyDeleteSo far I've loved most of your recipes, but you are way too talented to keep doing the _________ (fill in the blank)in a cup, crescent, roll, etc. - thing. I'm sure these are tasty, but you can do better!

ReplyDeleteNot sure why using ready-to-bake biscuit dough for a recipe is such an issue for some people, but if they don't like it, they don't have to do it - or they can make their own biscuit dough first. However, my question is this - how do you get them from the muffin tin without spillage?
ReplyDeleteSJerZGirl - I let them cool just a minute and they just popped out. I have a goldtouch pan from Williams Sonoma - it is a little deeper than some of my other muffin pans. There was a little that bubbled over in the pan, but nothing major. They were really good!

DeleteMy grandma makes something similar to this, (although she hasn't done so in quite some time!), we called them pizza cups. Same basic idea, just with pizza ingredients instead of lasagna, lol. Hers are pretty simple: biscuits, browned hamburger, onions, pizza sauce, pepperoni and shredded mozzarella cheese. These look great, too! It's another recipe I'll have to try someday!

Thank goodness I stumbled upon this recipe. It was so good and definitely going on our repeat list! It was so easy and great for a weeknight meal. Thanks!
