If you follow my blog, you know that pizza is one of my all-time favorite foods. I could eat it every day and never get tired of it This pizza was inspired by our recent trip to Vegas. I saw this on the menu at one of the places we ate lunch and made a note to whip it up when we got home.
OMG - delicious!! I absolutely loved this pizza - especially the creamy ricotta on top. I used my favorite weeknight pizza dough recipe and some frozen meatballs because I was out of homemade meatballs. This is a new favorite!
Meatball and Ricotta Pizza
(Printable Recipe)
1 recipe weeknight pizza dough or store bough pizza crust
pizza sauce
1 1/2 cups mozzarella, shredded
6 oz frozen meatballs, thawed and sliced
1/4 cup ricotta cheese
Place pizza stone in oven and preheat to 475°.
Roll out dough onto a piece of parchment paper (I trace my pizza stone onto parchment before placing it in the oven as a guide). Prick dough with fork and add sauce, mozzarella cheese and meatballs. Drop spoonfuls of ricotta cheese on top of pizza.
Transfer pizza to hot pizza stone. (I use a flat cookie sheet to move the dough to the stone) Bake for 12-15 minutes, until cheese is bubbly.

One thing great about pizza is you can create your own flavor. Depends on your taste. This one is making me hungry. =)
