Weeknight Dinner Rolls - you can have homemade rolls any night of the week! This recipe is ready in under an hour!

I am not a big bread maker.  It takes too long to make homemade bread, and I just don’t have hours to wait during the week. I stumbled across this recipe on Pinterest for quick yeast rolls and decided to give it a shot.

Wow!  These were a huge hit.  Chicken Legs was amazed at how quick and easy these rolls were.   He tells everyone about them – seriously!  Not only are they super quick and easy, they taste great!  They are especially tasty slathered with honey butter. Give them a try tonight; I promise you won’t be disappointed.

Weeknight Dinner Rolls

  • 1 cup plus 2 Tbsp warm water
  • ⅓ cup oil
  • 2 Tbsp yeast
  • ¼ cup sugar
  • ½ tsp salt
  • 1 egg
  • 3 ½ cups bread flour (can use all-purpose)

Preheat oven to 400 degrees.

In the bowl of a stand mixer fitted with a dough hook, combine water, oil, yeast and sugar. Stir to combine and let rest for 15 minutes. At medium speed, add salt, egg and flour. Knead with dough hook until flour is thoroughly mixed in and the dough is soft and smooth (approximately 2-3 minutes). Divide dough into 12 balls and place in a lightly greased 9×13 pan.  Let rest for 10 minutes.

Bake 10-15 minutes until golden brown.

  2. Made these tonight. They had sort of a funny taste like maybe I used too much yeast? I used the super quick kind…2 tbsp. Seems like maybe it was too much. On the back of the packet for bread it said to use a packet. I almost used all three :\
