This is comfort food at its best. This dish was inspired by one of my favorite quick weeknight meals – Spicy Chicken Mac. I love everything about that dish and decided I needed to make a beef version. We love chili at our house, so I went with an easy Chili Mac.
This was delicious. It only takes a few minutes to make and it is all in one skillet. Yay for easy clean up! This very filling and hit the spot on a cold night. We served this with some Cheesy Biscuits to complete the meal. This is also good reheated.
Chili Mac

1 lb ground beef
1 can Rotel tomatoes
1 can chili beans
1 packet chili seasoning
2/3 cup water
1 box Velveeta shells and cheese
In a large skillet, brown ground beef. Drain fat and return to skillet. A macaroni, chili seasoning, tomatoes, and water. Mix well.
Bring to boil and reduce heat to medium-low.
Cover and simmer 9 to 10 minutes or until macaroni is tender. Stir in cheese sauce from mac and cheese package and chili beans until well blended. Cook about 5 minutes, until beans are heated.
Top with shredded cheese and sour cream, if desired.
Do you cook the macaroni first, or put it in there raw?
