Lasagna Rolls Recipe - Lasagna noodles, topped with cheeses, rolled up and topped with sauce and mozzarella - great make-ahead meal. Can also freeze unbaked.
Yield: serves 4 to 6
Lasagna Rolls
prep time: 15 MINScook time: 25 MINStotal time: 40 mins
ingredients:
- 12 lasagna noodles
- 24-oz cottage cheese
- 2 cups grated mozzarella cheese, divided
- 1/4 cup grated parmesan cheese
- 1 egg
- 1 Tbsp parsley
- 1 jar (26-oz) spaghetti sauce
- 1/2 lb hamburger or sausage
instructions:
- Preheat oven to 350ĀŗF. Lightly spray a 9x13-inch pan with cooking spray.
- Cook lasagna noodles according to package directions. Drain.
- In a large skillet, cook hamburger or sausage until no longer pink. Drain fat and return to pan. Stir in spaghetti sauce. Heat over medium heat for about 5 minutes.
- In a large bowl, combine cottage cheese, half of the mozzarella, parmesan, egg and parsley. Set aside.
- Lightly spray a 9x13-inch pan with cooking spray. Spread about 1 cup of sauce over bottom of pan.
- Lay one lasagna noodle flat, top with approximately 2-3 Tbsp of cheese mixture. Top cheese mixture with a few teaspoons of sauce and roll up. Place seam side down in pan. Repeat with all noodles. Top with remaining sauce and mozzarella cheese.
- Bake uncovered for 25 minutes, or until sauce is bubbly. Allow to cook 5 minutes before serving.

ReplyDeleteOh my gosh I love making lasagna rolls over normal lasagna! They're so much more convenient, especially for leftovers. I always had the problem where my slices turned into just a mess, but not with the rolls!

ReplyDeleteCardio Queen - I put half of this recipe in a disposable foil pan. I cover it with saran wrap and then foil - just to keep out the freezer burn. I take it out of the freezer the morning I want to make it and put it in the fridge all day. If you don't have time for that, just take it out of the freezer while the oven preheats and add 10-15 minutes to the baking time. Just watch it and when it is bubbly, it is done.
