BBQ Meatloaf Sliders

I don’t like meatloaf.  I don’t know exactly why, but I sure it has to do with some I ate as a child.  I am sure the version I ate had onions and pepper chunks (or something equally as hideous) in it and immediately turned me off to it.  My friend Cathy posted her recipe for meatloaf.  She promised it was meatloaf for people who don’t like meatloaf.  I was skeptical, but I took the plunge and gave it a try.  
Chicken Legs was positive I wouldn’t like it and we would have to go out.  He was teasing me the whole time this was in the oven.  Guess what?  He was wrong.  I actually really liked this!  I think it was the brown sugar and BBQ sauce topping that really put this over the top for me.  I served the meatloaf on slider buns.  It was even good the next day. Chicken Legs ate it cold with some mayo. Give this recipe a try if you have people that don’t like meatloaf.  

BBQ Meatloaf Sliders
(Printable Recipe)

1 ½ pounds lean ground beef
2/3 cup milk
2 eggs
½ teaspoons salt
¼ teaspoon ground black pepper
2 tsp onion powder
1 Tbsp BBQ seasoning
¾ cup finely crushed saltine cracker crumbs

½ cup packed brown sugar
½ cup BBQ sauce

Preheat oven to 350 degrees.

 Line a 9×9-inch pan with non-stick foil. (much easier clean up this way)

In a large mixing bowl, combine beef, milk, eggs, salt, pepper, onion powder, bbq seasoning and crackers. 

Place in prepared pan and pat into an 8.5-inch square. Top meatloaf with brown sugar and BBQ sauce.

 Bake for 45-60 minutes.  Remove from oven.  Cut into 16 squares and serve on slider buns (if desired)

    2 – we live overseas and for the past 6 months I have used more recipes from your blog that I can count – I love having your "search " option
    3 – since living overseas I do a lot more freezer meals b/c cooking takes a LOT more effort over here – Meatloaf is one of them and one way I've made it differently is with a brown sugar and ketchup topping – it definitely changes the flavor and since that's what you like about this you may like it as a normal meatloaf too!! just a thought 😉

  2. Very similar to my recipe, I add garlic and oregano. For my glaze I use Ketchup, Brown Mustard and Brown Sugar. But the best part of my meatloaf is the bacon I wrap around it! I pat it out into individual patties, like a log shape, and then add bacon around it in a diagonal wrap. Then bake it 25 minutes and add glaze for the last 20-25 minutes.

  3. I love meatloaf. It used to be one of my favorite things to order at a diner when I was a kid (besides chicken croquettes). Also love meatloaf sandwiches! This is a must try because I'm always looking for good meatloaf recipes.
